Butter Chicken

If you’ve never had Butter Chicken, you’re in for a treat! This classic Indian dish takes chicken thighs and simmers them in a creamy tomato sauce packed with spices until the chicken is irresistibly tender. Serve over steamed jasmine rice and serve with warm naan bread!

Classic Butter Chicken

If you’re a fan of Indian food, then chances are you’ve had classic Butter Chicken before. And if you have, chances are even higher that you have become a cult follower much like myself. If you’re not familiar, Butter Chicken is a classic Indian dish consisting of chicken thighs simmered in a creamy tomato sauce until the chicken is super tender and infused with the most delicious, creamy spice-infused tomato sauce.

If you’re a novice to the Indian food game, the spice the spice list we use may be unfamiliar to you, but don’t worry, because these days, you can find all of them at pretty much any grocery store. Garam masala is the dominant spice used in butter chicken (we will talk about the other spices below), and it has the most wonderful curry-like taste to it. It’s packed with spices, but it’s not “hot” spicy, in it you’ll find notes of coriander, cinnamon, cloves, cumin, and pepper. It’s quite heavenly.

Spices in Butter Chicken:

  • Garam masala. We talked about garam masala up above, but the full list of ingredients includes cinnamon, mace, peppercorns, coriander seeds, cumin seeds, and cardamon pods. So if you don’t have any of the spices below, you can always double up on the garam masala instead.
  • Cumin. Ground cumin adds a nice smoky note to the butter chicken.
  • Fenugreek. While this ingredient is definitely optional if you can’t find it, it does add a lovely savory element to the butter chicken.
  • Coriander. Ground coriander is actually the seed version of cilantro, so it has a similar flavor profile to it. I find that ground coriander is a little more smoky in flavor and love the way it compliments ground cumin.
  • Tumeric. If you’ve never used turmeric before, now is a great time to start. This vibrant orange spice give dishes a lovely yellow hue and has a nice warm ginger-like flavor to it.
  • Brown sugar. To balance out all those spices, you need a little bit of sweetness and brown sugar is my sugar of choice.

Ingredients in Butter Chicken:

  • Chicken. Classic butter chicken is made with chicken thighs. Chicken thighs are a lot more flavorful than chicken breasts and they can hold up to a long-simmered sauce. Unlike chicken breasts, chicken thighs become super tender and shred really well when they’ve cooked for a semi-long period of time.
  • Yogurt. Whole-milk yogurt is a classic ingredient in a lot of Indian dishes. Here, we use it to marinate the chicken, since it helps to tenderize it in the process.
  • Garlic, onion, and ginger. I mean, is any dish complete without a little garlic and onion?
  • Crushed tomatoes. You could also use whole tomatoes and crush them yourself, but buying them pureed already is such a time-saver.
  • Lemon juice. I love the acidic bright flavor lemons adds to butter chicken, it’s a must!
  • Heavy cream. A classic component of butter chicken is the cream sauce, and to achieve that, we use a good amount of heavy cream. It’s what makes butter chicken so luxurious.

Let’s make Butter Chicken!

  1. Marinate the chicken. Marinating is a really important part of making butter chicken.Here’s what we do: Add chicken to a large plastic baggie. Add in yogurt, garam masala, cumin, tumeric, garlic cloves, ginger, and salt. Zip the bag shut and massage marinade into the chicken. Marinate for at least three hours, but no longer than 12. I find that you don’t need to marinate the chicken much longer than a few hours, but of course, if you’re prepping ahead of time, you can do it further in advance.
  2. Cook the chicken. Heat a large non-stick or cast-iron skillet to a medium-high heat. Add a little bit of olive oil and then sear the chicken. Sear for 3-4 minutes until brown and crusty, flip over and do the same on the other side.
  3. Make the sauce. Once the chicken is brown, remove from the pan. Turn the heat down to medium and add more olive oil, onions and garlic. Sauté until slightly softened. Stir in tomato sauce, remaining garam masala, remaining cumin, remaining salt, and tumeric, fungeek, coriander, lemon juice, and brown sugar. Bring to a boil and then reduce to a simmer. Add the chicken back to the pan and simmer until chicken is cooked through, about 4-5 minutes.
  4. Finish it off! Stir in the cream. Simmer another 2-3 minutes. Serve over rice with naan.

Substitutions and Tips and Tricks for Recipe Success

  • Make sure to get all the excess marinade off before searing the chicken otherwise, the bottom can burn.
  • If you don’t want to use heavy cream, you can swap out coconut milk or even light coconut milk.
  • If you’re really not into chicken thighs, you can use chicken breasts, but make sure you don’t overcook them.
  • Any kind of whole-milk plain yogurt will work, it doesn’t matter if it’s regular or Greek.
  • To add some sweetness and texture, I love to add in a handful of raisins and cashews. So yummy.
  • When searing the chicken, don’t try to flip it until it easily releases from the pan.

What to Serve with Butter Chicken:

  • The classic partners to butter chicken are steamed Jasmine rice and warm naan.
  • If you want a more substantial side, you could whip up a batch of these super crispy egg rolls.
  • Cilantro Lime Rice would be a nice update to plain steamed rice and would soak up all that delicious sauce wonderfully.

Can I make Butter Chicken in Advance?

Yes!!! In fact, this is just as good if not better the next day. Just make from start to finish, cool completely and store the chicken and sauce in one container and the rice in another container. Re-heat over a low heat until the chicken is up to temperature.

Ingredients

  • 1 and 1/2 pounds boneless skinless chicken thighs
  • 1/2 cup plain whole-milk yogurt (greek is fine)
  • 1 tbsp garam masala, divided
  • 1 tsp cumin, divided
  • 6 large garlic cloves, grated and divided
  • 1 tbsp minced ginger, divided
  • 2 tsp kosher salt, divided
  • 2 tbsp olive oil
  • 28 ounces crushed tomatoes
  • 1/2 lemon juiced
  • 1/2 tsp ground coriander
  • 1/2 tsp ground tumeric
  • 1/2 tsp feungeek
  • 1 tbsp brown sugar
  • 1 cup heavy cream

Instructions

  • Add chicken to a large plastic baggie. Add in yogurt, 2 tsp garam masala, 1/2 tsp cumin, tumeric, 3 garlic cloves, 2 tsp grated ginger, and 1 teaspoon salt. Zip the bag shut and massage marinade into the chicken. Marinate for at least three hours, but no longer than 12.
  • Once the chicken marinates. Heat a large non-stick or cast-iron skillet to a medium-high heat. Add 2 tablespoons of olive oil. Once the oil is hot, sear the chicken. (Make sure there isn't a lot of excess marinade on the chicken.) Sear for 3-4 minutes until brown and crusty, flip over and do the same on the other side. The chicken should release easily from the pan when it's ready to turn. If needed, sear chicken in batches, you don't want to overcrowd the pan.
  • Once the chicken is brown, remove from the pan. Turn the heat down to medium and add remaining olive oil, onions and garlic. Saute for 2-3 minutes until slightly softened. Stir in tomato sauce, remaining garam masala, remaining cumin, remaining salt, and tumeric, fungeek, coriander, lemon juice, and brown sugar. Bring to a boil and then reduce to a simmer. Add the chicken back to the pan and simmer until chicken is cooked through, about 4-5 minutes. *If you want a cream sauce, add the sauce to a blender before adding the chicken back in, blend until smooth, return to the pan and then simmer the chicken.
  • Stir in the cream. Simmer another 2-3 minutes. Serve over rice with naan.

Every Burning Question You Have About Timm Hanly's New Athleisure Brand, Front Runner, Answered

Australia was first introduced to Timm Hanly when he appeared on Angie Kent's season on The Bachelorette. Since then, he's gone on to star on The Bachelor in Paradise and accumulated over 163k Instagram followers. Now, Timm is using his newfound influence to launch unisex athleisure brand, Front Runner.

Inspired by fitness and athletic-wear from the '70s, '80s and '90s, Front Runner is designed to be those funky activewear pieces that are missing from your wardrobe. Think parachute tracksuits, scoop neck jumpers, bike shorts and American college hoodies, that come in vibrant colour ways.

Ahead of the brand's launch on September 1, POPSUGAR Australia caught up with Timm to find out all the juicy details about the range, including his favourite pieces and what inspired him to create Front Runner out of his garage during a pandemic.

POPSUGAR Australia: Congratulations on the launch of your new brand, what made you want to start Front Runner?

Timm: I think it was the very start of isolation when COVID-19 was labelled a pandemic and there was lots of panic about people losing jobs and businesses, I lost mine and had a lot of time on my hands, and I just saw it as an opportunity to do something I've always wanted to do but have never had the time/the ability to really sit down and nut out. I always look at big brands like P.E Nation and Lorna Jane, see them everywhere, bright colours and super funky feel-good type of clothes and think, why don't men get colours and loud athleisurewear? It's a lot of black and very safe. So I thought you know what I'll make my own and I'll do it for both men and women, so most things [from the range] will be unisex.

PS: What inspired the range?

Timm: The inspiration came to me very easily. At the exact same time that I was thinking of doing this my mum sent me an original of one of my grandfather's tracksuits that he made in the 50s, he was the head designer for a tracksuit company called 'Simpson' who designed for all the sports teams around Melbourne, that combined with my obsession with the '70s '80s and '90s fashion I came up with Front Runner.

PS: Can you tell us about what pieces will be in the first drop?

Timm: In the pre-release, it will be two colour ways of a high neck sweater in my favourite colour teal and a nice cream with green embroidery, and two hoodies inspired by an 80s American College vibe.

In the full range, you'll expect to see things from colour block parachute tracksuits, more sweaters, women's bike pants, some slouch socks and a few other little treats. It's the perfect collection to take us into spring.

PS: Do you have a favourite piece?

Timm: My favourite piece is the colour block parachute tracksuit that is on the way.

PS: Did your time on the Bachie franchise motivate you to start a brand?

Timm: Yeah, I think my time on Bachie did play a part in me starting my own brand. I've always wanted to do it and I've been gifted this following and audience, which not many people get that chance, so I think I just want to make the most of it and not be another flash in the pan.

PS: Who is your ideal consumer for Front Runner?

Timm: The ideal customer would probably be a couple that is looking to look good and feel better together!

PS: What's next for Front Runner?

Timm: Next step for Front Runner is getting through this pandemic and moving my office out of my garage! But I have big plans! I want to change the way men think about activewear/athleisurewear and this is the first step.

Just When You Thought Keep It Cleaner Couldn’t Get Any Better, Steph & Laura Launch KIC 2.0

When long time best friends Steph Claire Smith and Laura Henshaw launched their fitness app Keep It Cleaner back in 2018, they could never have imagined the impact and reach that their fuss-free approach to wellness would have.

Women all over the world subscribe to the lifestyle Steph and Lara embody and encourage via KIC. Focusing mainly on healthy lifestyle changes and eliminating the need for women to constantly compare and critique their bodies, the girls have worked tirelessly to flip traditional fitness industry on its head and shift women's perspectives on health and wellness.

Today, the girls launch KIC 2.0 an update of the original platform you've come to know and love, with new features and additions that are said to improve the experience entirely. Ahead of today's launch, POPSUGAR Australia sat down with Steph and Laura to talk about the re-launch, meeting their new trainers and quiz them about their favourite recipes and workouts from KIC 2.0.

POPSUGAR Australia: Congratulations on the re-launch of Keep It Cleaner, what made you guys want to relaunch the brand when it's already such a huge success?

Laura: Since its launch in late 2018, Keep It Cleaner (KIC) has always been focused on lifestyle changes that are accessible, fuss-free and easy to adapt no matter where you are in your wellness journey: Steph and I have been totally dedicated to flipping the fitness industry on its head, eliminating the need for comparisons and continual assessment of your physical self. KIC and our community is a platform we would have loved to have had when we were younger - it aims to set a realistic approach to wellness and is rooted in kind and respectful behaviours.

We know our message has really resonated with our community, I think because we are committed to transforming your mind with the support of a strong community, with a physical transformation a bi-product of the KIC journey.

KIC has been a phenomenal journey that has impacted so many people in a positive way and we are so grateful for this, but we continually strive to improve our offering to our community and make it better for them.

Last year Steph and I identified that we really wanted to grow the brand and begin to scale. We knew we needed to build out the team to do this and worked really hard to recruit Michelle Battersby as our Chief Marketing Officer. Michelle has absolutely been the driving force behind KIC's evolution and the new KIC app, which we'll all get to enjoy from Monday, August 17.

Michelle worked closely with Steph and I to understand what the previous success and failures had been to identify rooms for growth. As a result of this, the team began to dedicate an incredible amount of time working closely with our community to understand what they loved about the app and what they'd love to see more of from the platform. This approach has meant we've been able to integrate every opportunity to improve, and the result is totally amazing - we have new workouts, more variety when it comes to the types of workouts, new recipes and a group of new trainers who are so aligned with our values and are fantastic if you're just starting out or well and truly on your fitness journey.

PS:Can you walk us through what we can expect? And Introduce us to each of the new trainers?

Steph: You can expect a new and improved KIC and we are so excited about this. We have kept the best bits of the original KIC platform, including our founding trainer Danny Kennedy, and incredible wellness trainers. However, we are introducing many new features and additions that we think will improve the experience entirely.

The new trainers are one new feature that we're really excited about. Ellice Whichello will head up KIC boxing programs and is entirely fierce yet incredibly kind, her workouts are absolutely challenging but so much fun.

Brooke Jowett, who heads up our KIC HIIT masterclasses, and is a former Survivor, knows a thing or two about resilience but is also one of the loveliest human beings we have ever worked with. Brooke's HIIT classes are high energy and seriously fun, you seem to fly through them and finish feeling so great.

Brittney Cutts leads the KIC strength program and has been a friend of mine for many years now. She has this incredible way of inspiring you to lift and hold for longer, so you finish each workout feeling empowered and revitalised. She's got such a big heart and I just know the community are going to love her.

In addition to the new fitness programs, we also have some really exciting new recipes, as well as a vegan meal plan that Ellice Whichello our boxing trainer and nutritionist, has created for KIC.

Another incredible addition to the new KIC app is the personalised options we will now offer. We know that you feel different each day, so how you want to work out is likely to change too. The new KIC app will enable you to workout with an interval timer, link your music to your favourite Spotify playlist or the option to join the trainer in the workout or just follow the steps. This is all new to KIC and we know something our community is really thirsty for.

PS: How do you think your KIC community will react to the relaunch? Were all these changes inspired by feedback from your KIC community?

Laura: We are entirely confident our community will welcome the new and improved KIC platform because it has so many more options and experiences for the community to enjoy as they go on their wellness journey.

We've actually already had some incredible feedback from the community with the teasers shared on our socials over the last couple of weeks. It has been so hard keeping the secret from them, but we think they'll be well rewarded on Monday, August 17 when the KIC app goes live.

PS: Over the last few months everyone's approach to fitness and wellness has changed, how has that impacted the KIC community?

Steph: We are all living in unprecedented and uncertain times. In March when the world went into lockdown the KIC team were desperate to do something to give back to our community and beyond. KIC launched the virtual gym, which saw Laura and I do an IG and Facebook Live workout three times a week. This was a truly incredible concept, we had thousands and thousands of people from all over the world jumping on each morning, helping to keep us all motivated in challenging times.

The KIC community has always been a positive one but Laura and I have been so proud to see how supportive the community are of each other during this time.

We believe a strong focus on moving our body regularly, being inspired by new recipes, being mindful when we can, and coming together as a supportive community will get us all through this.

PS: Do you guys each have a favourite new workout within the app?

Steph: Honestly, they're all so good it really is almost impossible to choose! However, I really love Christina's new Pilates sessions and one of my favourites would be 'Find Your Rhythm'.

Laura: It is so hard to choose. One of my faves is Ellice's Full Body Burner which is a killer and so much fun.

PS: And a new favourite recipe we should look out for?

Steph: The Creamy Pumpkin Fettuccine recipe from our new vegan meal plan is DELICIOUS! So filling and something the whole fam can enjoy.

Laura: I love the Cobb Salad with Coconut Bacon which is one of our new recipes as a part of the new vegan meal plan and is so damn delicious.

PS: And finally, where do you girls see the future of fitness/KIC heading?

Steph: If 2020 has taught us anything (besides patience), flexibility, virtual experiences and community are critical to the future of fitness.

Laura: Personalisation is the future of the fitness industry. Steph and I created KIC to be the PT in your pocket as well as your ultimate work out buddy - the new KIC app has so many options when it comes to getting moving, so you can craft a workout that suits your needs for that very moment.

Delta Goodrem Opens Up About the Health Scare That Inspired Her New Song "Paralyzed"

Aussie darling Delta Goodrem opened up about a terrifying health scare that left her unable to speak following complications during surgery.

The singer took to Instagram over the weekend to explain how an issue with a salivary gland removal two years ago caused paralysis to a nerve in her tongue leaving her unable to speak. Which is absolutely terrifying when your voice is not only your livelihood, but your passion.

In a video filmed post-surgery in October 2018, a tearful Goodrem explains the toll this had taken on her mental and physical health to the camera: "I don't want to go out, I'm super embarrassed. I'm just over it. I'm just trying to stay positive." Adding, "My livelihood is my sound … I'm trying to decide whether this is getting any better or not. It doesn't feel like it."

The Voice judge also shared confronting footage from her hospital bed where she can be seen visibly upset and struggling to communicate post-operation. Luckily, after months of rehabilitation with daily speech therapy, Delta was able to fully recover and get her iconic voice back.

She went on to explain to fans the reason she'd kept her health battle private for so long, explain how she hadn't been "ready" to share it until now. With the launch of her newly released song "Paralyzed", she opened up about how the experience inspired her new music and that everyone has their own unique story to tell.

"I share this with you as an artist sharing where the poetry in this song comes from, and as a human who deeply feels and understands that everyone has their own story and their own challenges," she said.

Delta's video serves as a reminder that no one really knows what others are privately struggling with, "you never know what someone is going through and this is an extremely hard time for people. So I send this story to you with the message of hope and love."

The Art and Science of Foods That Fill You Up

How much are you eating? Do you know? Counting calories can suck, and be a lot of work, but it’s worth doing for at least 2-3 days to get a sense of whether or not your eating is on target.

But let’s say your daily calorie intake is about where it should be. In that case, we’d look to incorporate more foods that enhance your feeling of fullness. Research to date has found that there are three keys to achieving it.

(Sadly, none of them are bacon.)

They are protein, fiber, and water.

So how do you get more of them into your life? Here’s a simple way to make it happen and feel more in control of your diet (and hunger) than ever. 

Prioritize protein at every meal.

Research consistently shows protein is the most filling macronutrient, so it’s great to have a serving of it at each meal. If you want to take it a step further, you could set a goal.

“We recommend approximately 0.8-1g of protein per pound of target bodyweight if you are active,” says Born Fitness nutrition coach Natalie Sabin. (Note: Target body weight is what you want to weigh, not necessarily what you weigh currently.) “Not only is protein satiating, but it’s also muscle-sparing — meaning you’re more likely to hold on to your lean mass when you are in a calorie deficit.”

Meat, eggs, and dairy are all good sources of protein. If you are a strict vegetarian or vegan, then rice and beans, quinoa or tofu are all go-to options.

Choose carbs that fill you up (the right way).

According to the satiety index, fresh fruits and vegetables are ideal additions. Potatoes, beans, and oatmeal are all proven to quell hunger longer — which makes sense since all are rich sources of dietary fiber. So are fruits.

Researchers at Penn State University found that when subjects consumed a 125-calorie apple before lunch, they ate 200 fewer calories in the meal that followed. They also reported a greater feeling of fullness.

Let’s get nuts.

You might think that, with high concentrations of calories and fat, nuts wouldn’t be a great idea for dieters. But nuts are a surprising success story when it comes to weight control.

According to obesity researcher and writer Stephan Guyenet, Ph.D., nuts “are less calorie-dense than they might seem because some of their calories pass through the digestive system unabsorbed.”

Basically, he means: When you eat a serving of almonds, which is about 162 calories, your body won’t necessarily take in all of those calories. Some will just pass right through you, a phenomenon that researchers attribute to the nut’s hardness and high fiber content.

This doesn’t mean you should go crazy and gob down handful after handful. There’s a big difference between “not all of the calories get absorbed” and “calorie-free.” (And let’s be clear: nuts are definitely not calorie-free.) Enjoy, but watch your serving sizes here.

Just add water.

Numerous studies show that consuming water before a meal reduces calorie consumption and increases the feeling of fullness. Many people have heard the “8 glasses a day” rule, but few actually do it.

From wherever you’re starting, see if you can add three glasses to your daily regimen: one before (or during) breakfast, lunch, and dinner. If you opt to drink during the meal rather than before, try taking a sip between bites.

If you’re doing all of these things, but still feel like you barely make it to lunch without gnawing your arm off, switch up one more thing: How often you eat.

Easy Apple Dump Cake

Fall is upon us and apples are falling from trees. This favorite apple dump cake is perfect to enjoy this fall. It is simple to combine all the ingredients and bake. Easy recipe that only has five ingredients. Warm delicious dessert is a family favorite and can feed a crowd!

Gooey apple fruit filling satisfies every sweet tooth out there. Make this with fresh or canned apples this fall season. Add an extra touch by adding toppings or having a few variations with fruit mixtures.

What is the Difference Between a Dump Cake and a Cobbler?

A dump cake is very similar to cobbler dessert. They both have baked fruit dessert topping with a type of crust. Fruit is the main ingredient that can be fresh, frozen or canned and baked in a baking pan all together. Cobblers have more of a crumb topping compared to a dump cake.

Dump cake is a cake with a cake box mixture in the ingredients. Both are a favorite fall dessert and can be made year round. Dutch oven, slow cooker or baked are a few ways that a cobbler is cooked whereas a dump cake is usually cake like and baked in the oven.

Apple Cake Ingredients:

Only five ingredients that are easy to have on hand makes this a simple cake recipe that is heavenly! Sweet and savory in every bite topped with vanilla ice cream or caramel to enhance the dessert even more.

  • Apple Fruit Filling: Pick your favorite cans of apple filling or peel fresh apples.

  • Pecans: Chopped and mixed together.
  • Butter: This is placed on top of the crust while being baked.

How to Make a Dump Cake from Scratch:

Simply combine the ingredients together and bake until golden brown. This is a perfect dessert to share with friends and family. It is ooey and gooey right out of the oven and ready to be served right away!

  1. Prepare Baking Pan: Preheat oven to 350 degrees. Grease a 9×13 inch pan and place apples evenly into the bottom.
  2. Combine Ingredients: In a medium sized bowl combine the cake mix, cinnamon and chopped pecans. Sprinkle evenly over the top of the cake.
  3. Bake Dump Cake: Add the cubed butter to the top of the cake.  Bake for 50-60 minutes or until golden brown and bubbly.

This apple dump cake is perfect by itself of add a few fun and delicious toppings to. Some favorites that we have enjoyed are homemade salted caramel sauce, vanilla ice cream or keeping it simple with whipped cream. Tips and Variations:

You can’t go wrong with this delicious dump cake recipe. It is a Tried and True favorite and loved by all. My kids beg for this recipe every fall season and we love to enjoy it as the temperatures are cooling down and we can warm up to a fresh tasting apple dessert!

  • Cake Mix: Enjoy spice cake mix for a fall/halloween dessert recipe.
  • Fresh Apples: For a different texture and taste use fresh apples that are peeled and sliced for adding to the baking pan.
  • Best Apples: Gala, honey crisp, granny apple or a mixture of all.
  • Spread the Cake: Be sure to evenly spread the cake batter in the cake pan so that the cake bakes evenly.
  • Clumps while Baking: If you have clumps in the cake mix carefully shake and more the cake pan around until it appears more even. Using a fork also helps break up the clumps.

Storing Apple Dump Cake Recipe:

I will be shocked if you have any apple dump cake left overs! If you do, you are in luck because it does store very well to enjoy for another day.

  • Room Temperature: Simply leave the cooked dump cake on the counter for 1 to 2 days long. Warm up using the microwave or oven to reheat.
  • Refrigerate: Place the leftover apple dump cake in a dish and place in the refrigerator for 2 to 3 days long. When ready to warm up use a microwave or bake tin the oven at 350 degrees Fahrenheit.
  • Freeze: It is best not to freezer this apple cake recipe. Cakes are harder to freeze and this cake tends to fall apart and become crumbly after it has been sitting in the freezer.
