Beth Noy: Becoming an Eco Warrior is About Daily Changes

Beth Noy is the founder of Plastic Freedom, one of the largest plastic-free online shops and brands in the UK. Seeking a platform to channel her plastic frustrations, Beth started a blog giving advice on ways for people to cut out single-use plastics at home and to provide accessible inspiration for buying plastic-free alternatives. Providing popular with both her peers and the general public, Beth’s plastic-free ambitions rapidly evolved, which soon led to the launch of Plastic Freedom in 2018.

Most recently, Beth has teamed up with ‘One Tree Planted/ meaning that for every Plastic Freedom order placed, one tree will be planted in a chosen location across the world.

Was there a particular incident, person, or event that inspired you to go plastic-free?

Moving to a seaside town and seeing the amount of plastic and rubbish on beaches really opened my eyes to the plastic problem as it was everywhere, right on my doorstep! It then made me start seeing things in a different way and noticing myself and my work colleagues buying meal deals and a lot of disposable packaging every day for lunch; it made me start to think about how much we throw away.

What was the biggest challenge behind founding Plastic Freedom? Have you ever imagined it growing so big so fast?

Honestly just the sheer amount of hours I have to work sometimes because of the business growing so quickly!

In the beginning, I was still juggling a full-time job whilst trying to grow my business and then recently with the pandemic. Having to keep my staff at home for their safety, being much busier with orders than we have ever been in history and having to move into our new warehouse. We had enough room for social distancing, all on my own and living alone too, really took some digging deep to get through!

It’s these times which are also my favourite though: the demand for products, the awareness that’s spreading about the plastic pollution problem, seeing big changes that are starting to happen and proving to myself again and again that I can get through anything, on my own; it’s a powerful feeling.

Tell us about your tree planting project. It’s absolutely amazing as you’re literally supporting the lungs of the Planet and allow your Plastic Freedom community to contribute to this great cause. Where do the trees get planted? Have you ever planted a tree yourself?

I plant my trees through the incredible organisation One Tree Planted and you can choose different places to plant them around the world! It’s something I’m so passionate about as we keep hearing everywhere now that planting trees is going to have the biggest impact on climate change so to be able to do that myself on such a big scale now, knowing it’s growing, is a dream I never imagined!

I have never planted a tree myself (it’s an ongoing joke that I kill every plant that I go near – I am not green-fingered) but I have recently decided to move away from my current home town so that I can start to really get hands-on and volunteer/create new opportunities/ideas for Plastic Freedom in the future. Being surrounded by the coast and nature is what continues to drive me forward!

What’s your approach to plastic-free movement – are you more hard-core “ditch it now and for good” or suggest a slow but steady, mindful transition?

Slow and steady, always! You have to be realistic when starting on a journey to Plastic Freedom because we don’t live in a perfect world. It took me about twelve months to go completely plastic-free and it’s those small changes over time which then just became normal life for me and allowed me to stick to them!

We spotted a yoga mat on Plastic Freedom Instagram. Do you do yoga or practice meditation?

YES! I absolutely LOVE it and it changed my life, honestly! The way I am and running a business means I’m always in a “go-go-go” mode, so being able to get on my mat, switch off and flow is the most incredible release and the only way I’ve ever been able to give my mind the rest it needs.

My favourite ever teacher (I haven’t found anyone that even comes close) and now also one of my closest friends is Paris Parle she just launched an app too. She has a way of connecting and speaking to your body that allows you to awaken everything inside you whilst slowing down your mind and letting go of everything that you’ve been holding on to, without even realising.

We recently just went on a trip to Newquay together and being able to practice next to the ocean was one of the most magical experiences, especially when a turtle appeared (you can see the whole reaction to that on my Instagram as it definitely disrupted our practice)!

Yoga has taught me that there is a bigger picture and bigger things at work, so by letting go and letting life flow, things will work out how they are supposed to. It’s also taught me to be kinder to myself and check in with my body and mind to give myself the time I need to slow down, heal and then come out stronger!

Unfortunately, the world of yoga is overly plastic-saturated. From yoga mats to non-sustainable workout clothes, sometimes it’s challenging for the yogis to avoid plastic. Could you give us three practical pieces of advice on how to shift towards plastic-free living without breaking a bank?

I actually don’t think it is, but this is the same with everything in the world; there is always someone out there making waves to change things! I have a yoga mat made of natural tree rubber, gym clothing made out of recycled plastic bottles and a reusable water bottle.

I want to make these options accessible for everyone (my new website will have SO many eco options like this even if I don’t stock them) to make it easy and fun for everyone to make changes!

You also have to think about the longevity of a product when you look at the price, plastic-packaged or plastic items are cheap because they are designed to be thrown away. If you keep buying these repeatedly then you’ve often spent more than you would on a reusable one; the plastic-free option is nearly always going to be the cheaper option!

How can one become a change-maker in the plastic-free world? Can a single drop in the ocean eventually cause waves?

YES YES YES! You only have to look at myself or Greta Thunberg (I am not putting myself in the same bracket as her at all) but it literally takes one person to be passionate and pass on the knowledge to others and it spreads so much quicker than you would think!

So many people said to me when I started going plastic-free that I alone couldn’t make a difference so I said, “okay, watch me”. Two years on I have now sold over 175,000 plastic-free products (that would have otherwise been plastic), planted over 20,000 trees across the world, helped small brands grow so they had to take on extra staff and some of these are now stocked in huge department stores making them become a ‘normal’ product that people can choose over a plastic one on the shelf.

You can do whatever you set your mind to and have a bigger impact than you can ever imagine!

In your opinion, what will it take for the plastic-free movement to become the way of living for the world versus a selected group of people?

It’s already happening and it’s so exciting to see! It all comes down to consumer demand; if the consumer changes what they want, then the bigger companies have to change their products to sell more. It may sound crude but so much of this world is run by money and every single person has so much power with the money in their pocket and where they choose to spend it.

This pressure on bigger brands when their sales drop, along with documentaries, change-makers and protests across the world and protests shows the government what the popular topics are and then their policies change. Remember, they want to be in power so they will change their policies to get votes for the most popular things amongst the public because guess what, it results in them getting more money if they are voted in!

Let’s imagine the world without a single bit of plastic – how does it feel?

Incredible and honestly I have so much excitement in me every single day! I started my plastic-free journey when it wasn’t seen as an issue by anyone and it was a lonely, helpless place to be. Now you only have to walk outside to see so many people making changes, adverts for green solutions, it’s talked about in the news, amongst friends. If you give people the solutions they will more than likely start to make changes too!

The Truth About Sugar…

Diet culture has told us to be scared of certain foods. And the latest one is sugar!

So is sugar as bad as we’re told?

Sugar comes in so many different forms. Fruits can be high in natural sugars, however this sugar is unrefined, and completely fine to include as part of a healthy diet! Fruit also contains so much fibre, vitamins, minerals and antioxidants, so the sugar component isn’t something to fear!

In addition to fruit, I love to use honey and maple syrup in my recipes (especially when baking healthy treats!) as these are unrefined sources of sugar. It’s still important to be mindful of these sweeteners, and enjoy them in moderation. The JSHealth App and blog contains a bunch of healthy treat recipes which use natural sweeteners in moderation.

On the other hand, refined sugars such as white and brown sugars and high fructose corn syrup found in many processed and packaged foods, can absolutely spike your blood sugar levels, and bring your energy levels crashing down. 

In most processed foods, you’ll find a lot of added sugars, which is something to be aware of. When choosing packaged or processed foods, try to aim to select products which contain 5-10g of sugar per 100g as a general guideline – this helps ensure you’re choosing quality products without added nasties!

However again, these are fine to include as part of your healthy diet, when enjoyed in moderation. No need to fear them – more be aware of them.

So now let’s consider artificial sweeteners…

Are these really any healthier than normal sugar? I urge you to reconsider enjoying them as part of your diet. The science around these sweeteners is concerning.

The truth is, most of these sweeteners are no healthier than regular sugar. Research has found some of these sweeteners can have a harmful impact on your gut microbiome, as well as containing potentially dangerous chemicals, which can negatively affect your body. These sweeteners have also been found to increase hunger and sugar cravings, affect mood, and may cause headaches and other side effects.

Jenny Bird’s New Collection of Charms is Here to Make Your Summer Fun

Jenny Bird has released a fun, new charms collection – a first for the Toronto-based brand – to mark the 2020 summer season. The collection, Bird tells us, has been in the works for some time but she was waiting for the right time to release the products. Speaking with FASHION about the new launch, Bird explained, “We came up with the concept for the Summer Charms a year ago and have been sitting on them as it hadn’t felt necessary to drop them until recently. The original idea was to inject some playfulness into the line after a few more serious seasons, design-wise. The world needs as much happiness as it can get right now. They are little nuggets of joy, something we could all use more of these days!”

The collection includes an egg, avocado, a banana, rainbow and a pizza slice, designed in collaboration with Toronto-based artist Rachel Joanis. “As soon as I saw Rachel’s work, I knew it was a great match based on my direction for the project (which was Matissse’s The Cut-Outs meets Marimekko),” explains Bird. “I love that Rachel focuses a lot of her work around women, and promoting different ethnicities and body types, to help further inclusivity and promote equal representation. Rachel is such a talent and was a pleasure to work with.”

The charms have been designed to work with a selection of Bird’s chokers, chains and anklets and have been engraved with cute messages on the back, like ‘You crack me up’ on the egg and ‘Over it’ on the rainbow. So if you’re looking to inject a little fun into your last five weeks of summer, these charms will do just that. 150+ Experts Implore US to Close as Pandemic Grows: "Shut It Down Now and Start Over"

Coronavirus case counts across the US continue to rise, surpassing the 4 million mark on Thursday even as reopenings continued. Frustrated by the inadequate government response, over 150 scientists, medical experts, teachers, and nurses from across the US signed an open letter urging leaders to shut down the country or risk losing even more American lives to COVID-19.

"Of all the nations in the world, we've had the most deaths from COVID-19," the letter begins. And yet it seems that the priority is not to stop the spread, but to reopen the economy, which, though important to the livelihoods of many Americans, exposes "more and more people to coronavirus."

"In March, people went home and stayed there for weeks, to keep themselves and their neighbours safe. You didn't use the time to set us up to defeat the virus," the signees tell leaders. "And then you started to reopen anyway, and too quickly." Citing data from the Institute For Health Metrics and Evaluation (IHME) at the University of Washington, the experts write, "right now we are on a path to lose more than 200,000 American lives by November 1st."

The letter's signees, which include researchers and doctors from Harvard, Stanford, and UC Berkeley, among others, implore leaders to "get [your] priorities straight," "listen to the experts," and "shut it down now, and start over." To truly address the pandemic, they say that testing capacity needs to be increased, more contact tracers need to be hired, and more personal protective equipment should be made available to essential workers. As it stands now, testing capacity is at 39 percent of what it needs to be; as of June, only seven states and Washington, D.C., had the recommended number of contact tracers; and many healthcare workers are again facing a shortage of essential PPE such as gowns, masks, face shields, and gloves.

In addition, the experts say that nonessential businesses should be closed and restaurants limited to takeout, and that people should stay at home as much as possible and wear masks while interacting with others, both indoors and outdoors. They also recommend barring nonessential interstate travel: "When people travel freely between states, the good numbers in one state can go bad quickly," they explain. With this baseline protocol in place, the experts say, we can wait "until case numbers recede to a level at which we have the capacity to effectively test and trace. Then, and only then, we can try a little more opening, one small step at a time."

They continue, "If you don't take these actions, the consequences will be measured in widespread suffering and death."

These steps are stringent and perhaps difficult to hear, but the experts urge leaders and readers to remember what's most important. "The best thing for the nation is not to reopen as quickly as possible, it's to save as many lives as possible."

If you’re looking for a quick dinner idea that the whole family will enjoy, make a pizza! This is a tasty vegetarian option, letting the summer squash shine. The zucchini is thinly sliced, evenly placed around the dough, and then seasoned with Italian herbs and savory seasonings.

How to Make Zucchini Pizza:

  1. If using fresh dough, let it sit at room temperature for 30 minutes to make it easier to toss.
  2. Grease a baking sheet with olive oil and sprinkle with cornmeal.
  3. Shape the pizza dough into a 12-inch circle on the baking sheet.
  4. Evenly spread on the pizza sauce, shredded cheese, zucchini, Italian seasonings, salt and pepper.
  5. Bake at 500ºF until the crust is golden brown and crisp, 10 to 12 minutes.
  6. Sprinkle it with red pepper flakes and parmesan cheese.
  7. Slice and serve the pizza while hot and the cheese is melted.

Pizza Crust:

I use my super easy homemade pizza dough recipe to make the dish from scratch. It yields two pies that have irresistible crispiness, and only takes about an hour to prepare! Or if you are in a pinch for time, store-bought crusts can be used. Look for 1 pound of fresh dough or the 10 to 12-inch wide pre-baked rounds.

More Ways to Cook a Pizza:

Baking the pizza on a large sheet pan yields a larger pie and gives you more flexibility on the size, shape, and thickness. However, for an extra crispy crust, you can bake the pizza in a large cast-iron skillet. You can also grill the pizza dough, flip over, then add the toppings and heat until the toppings are hot and bubbly.

Other Topping Suggestions:

To switch up this recipe, other ingredients can be used to pair with the zucchini. Slice up some yellow squash, red onions, or bell peppers for extra color and crunch. Add some mushrooms for a more savory taste. Sprinkle on some creamy feta, goat, or ricotta cheese. Add some pungency with marinated artichoke hearts or briny olives.

Ingredients

  • Olive oil for brushing
  • Cornmeal optional
  • 1 pound fresh pizza dough store-bought or homemade
  • ½ cup pizza sauce or marinara sauce
  • 1 cup 4 ounces shredded mozzarella cheese
  • ¾ cup thinly sliced zucchini ⅛-inch thick about 22 slices
  • ¼ teaspoon Italian seasonings
  • kosher salt as needed for seasoning
  • black pepper as needed for seasoning
  • Red pepper flakes for garnish, optional
  • Shaved parmesan cheese for garnish

Instructions

  • If using store-bought pizza dough, allow to sit at room temperature for 30 minutes.
  • Set the oven rack to the lower position. Preheat to 500ºF (260ºC). Lightly brush a large baking sheet with olive oil. Evenly sprinkle cornmeal on the pan if desired.
  • On a lightly floured surface, stretch and shape the dough into a 10-inch circle.
  • Transfer dough to the baking sheet. Use fingers to press into a 12-inch circle. Leave the edges slightly thicker, about ½-inch tall and wide.
  • Brush some olive oil on the edges of the dough to make the crust crispier when baked.
  • Spread the sauce on top, followed by the cheese, and zucchini. Sprinkle the Italian seasonings on top, and some salt and pepper.
  • Bake the pizza on the lowest oven rack until the crust is golden brown, and the cheese is melted and bubbly, about 10 to 12 minutes.
  • Sprinkle some red pepper flakes (if using) and parmesan cheese on top.
  • Slice and serve pizza immediately when still hot.

Are you a snacker? I sure am! Snacks can be a great way to maintain your blood sugar levels and support healthy portion sizes at meal times but, if you’re not careful they have the potential to add significantly to your overall intake. So, to keep snacking in check, here are some really helpful snacking tips from Tiff;

  1. Snack like a snail
    It takes about 20 minute for your brain to register that you’re full, so eat slowly. This gives your brain time to realise that your stomach is full! It will prevent you from eating the entire 12 serves of this recipe in one go.
  2. Tune into your tummy
    We often listen to our mind and our emotions to guide our eating habits, rather than listening to our gut. The next time that you think you’re hungry, take a moment to discern if you are listening to your mind or your gut.
  3. Snack sitting Down

  • 100 g (3½ oz/1 cup) rolled (porridge) oats (use brown rice or quinoa flakes if gluten-free)
  • 90 g (3¼ oz/¹⁄³ cup) peanut butter
  • 1 ripe banana
  • 50 g (1¾ oz) butter, melted
  • 30 g (1 oz) dark chocolate (70%)
Instructions
  1. Line a rectangular baking tin with baking paper.
  2. Place all of the ingredients except the chocolate in a food processor and blitz until the mixture comes together, scraping down the side as you go. The mixture should stick together when pressed with your hands. If the mixture is too dry, add water a teaspoon at a time. If it’s too wet, add an extra tablespoon of oats.
  3. Transfer the mixture to the prepared tin and press down gently so it’s evenly spread out.
  4. Place in the freezer for at least 1 hour to set. Once set, remove from the freezer.
  5. Roughly chop the chocolate and place in a heatproof bowl. Microwave for 30 seconds at a time, stirring after each time, until melted and smooth. Alternatively, use the double-boiler method on page 73.
  6. Drizzle the chocolate all over the chilled mixture and return to the freezer for a few minutes to set.
  7. Once the chocolate has set, carefully remove from the tin and slice into 12 bars. Store in an airtight container in the fridge for up to 5 days.

How a Smart Watch Helped Keep Me Motivated and Accountable While Working Out at Home

Finding the motivation to exercise at home can often be a struggle, especially during the Winter months. It's cold outside, mid-year fatigue is kicking in and that bottle of red looks way more appealing . . . lifting a glass or two to my mouth counts as weights, right?!

I've never owned a smartwatch before, however, my friends in fitness circles rave about how they help to keep them accountable and reach their fitness goals. So I decided to give Huawei's GT 2e Smart Watch a try and see if it lived up to the hype.

Huawei's smartwatch tracks just about everything from your training intensity, aerobic and anaerobic capability right through to your sleep cycle and recovery time. There are 85 different workout modes to chose from and quick start functions for exercise like walking or running.

It also does all the things you'd expect from a smartwatch, receives calls and texts, plays music, shows you the weather forecast, sets alarms and timers . . . you name it, it does it. While these are all great functions and are compatible with iPhones and androids as well as Huawei's smartphones, I was mainly interested in the fitness aspect.

Short verdict: I'm obsessed!

Long verdict: I trailed the watch for four weeks, during this time I mainly used it to monitor my sleep, track my workouts and meditate. Let's unpack each function.

Sleep:

I found the sleep tracking function really interesting. It allowed me to see what stage of sleep I spent the most hours in (deep or light) and I kept some notes in my phone when I noticed patterns or nights where I had better sleep in order to pinpoint why that may be the case. Over the four weeks, I figured out that I slept best when I worked out in the mornings and shut off from technology earlier. I still slept well when I worked out in the evenings but it took my body longer to slow down and for my brain to switch off.

Tracking Your Training:

This was my favourite feature by far, and I found it motivating to be able to see my progress, reassess where I was at and increase my fitness goals as I was burning through them. After each run, I could check the Huawei Health app (iOS - Android) and see exactly how I was moving through each section of my run. It tracked my pace (km/hr), cadence (steps/min), my workout phases (warm-up, fat-burning, aerobic, anaerobic and extreme), my heart rate and the suggested recovery time for a workout of that intensity. Over the four weeks, I improved my 10km run pace by a full six minutes and I honestly put it down to wearing the smartwatch, because I could physically see my efforts and review them after each session, which allowed me to adjust my run accordingly and achieve my goals.

Meditation:

When I first read about this function I didn't think I'd use it much. I have always struggled to meditate and silence the head noise without physically moving my body at the same time. However, the app talks you through some light breathing exercises that actually makes meditation achievable. They're quick, easy and literally on your wrist, so whenever I started to feel overwhelmed I'd just take a few minutes to use the watches meditation function.

Overall:

While smartwatches might add too much pressure for some people, for me, it was a fantastic way to stay motivated while trying to achieve my workout goals. It helps keep me accountable and the endorphin rush I got from tracking my results and seeing improvements made it worth it. The Huawei's GT 2e Smart Watch comes with an affordable price tag of $349 and if like me, you're looking for an extra burst of motivation, this could be it.
