Amazing Creamy Tuscan Garlic Scallops

Creamy tuscan garlic scallops are infused in a creamy garlic sauce that is to die for with sun dried tomatoes and spinach hidden throughout. This is a MUST make tried and true dinner!

If you haven’t tried my insanely popular Tuscan Garlic Chicken yet, now is the time to try with scallops. This is a restaurant quality meal that you can easily make at home!

Amazing Creamy Tuscan Garlic Scallops

These tender- crisp buttery scallops, enveloped in a creamy, garlic rich, smooth sauce are going to melt in your mouth. This is going to surprise you with how easy it is to make this, yet at such a fine dining quality. The sun dried tomatoes are going to release so much flavor into the sauce, while cream, wilted spinach leaves and garlic give it body.

So many people are scared of cooking scallops, but they’re really one of the easiest to cook, and this is just the recipe to try them with. They cook fast similar to shrimp so it comes together quite in pinch for a delicious weekday meal.

Tuscan Garlic Scallop Ingredients:

For a perfect meal serve our Creamy Scallops over pasta with a simple side salad and Crusty French Bread. For low carb, keto friendly try over your favorite roasted veggies, zoodles or Mashed Cauliflower to soak up this amazing sauce.

  • Olive Oil: Avocado oil can be substituted here but I like the flavor of the Olive Oil.
  • Scallops: If you don’t like scallops try fresh Shrimp instead.
  • Heavy Cream: Using the Heavy cream vs Half and half will give you a more rich decadent sauce.
  • Chicken Broth:  Adds savoriness and flavor
  • Garlic: mincing the garlic will saute at an even rate, careful not to burn it.
  • Garlic Powder: Adding garlic powder helps give you that bold garlic flavor.
  • Italian Seasoning: One of my favorite quick go to spices
  • Parmesan Cheese: Freshly grate your own or look for it pre-shredded in you store.
  • Spinach: Don’t be shy with spinach it will cook down. Chop it small pieces to avoid large leaves.
  • Sun-dried Tomatoes: Find jarred sun-dried tomatoes where you find canned vegetables.

How To Make Creamy Garlic  Scallops:

  1. Sear: Heat oil in a medium skillet over medium high heat until it’s hot and sizzling. Thoroughly pat scallops dry with paper towels. Add the scallops in a single layer, (may need to work in small batches to avoid over crowding.) Sear until a nice golden crust forms, flip and sear on other side. Transfer to a plate once done.
  2. Make the sauce: In the same pan and a little more olive oil and saute the minced garlic just until fragrant, about 30 sec. Add the broth, cream, garlic powder, Italian seasoning, and cheese. Whisk until it starts to thicken.
  3. Simmer: Add the sun-dried tomatoes and spinach and let simmer till the spinach wilts.
  4. Add: Gently add the scallops back to the sauce, giving it a quick stir.

How to Cook Perfect Tender Scallops:

If you have never cooked scallops at home, it can seem intimidating. Here are a few tips to help make it easy.

  • Buying: Look for frozen wild caught scallops without the roe for ease. The roe is a bright orange or coral colored crescent shape that can still be attached. It can taste a bit bitter. If that is all you can find simply remove it before cooking.  Whole scallops will also come with the roe and the muscle that attaches it to the shell, that too will need to be removed.
  • Thaw: Place the scallops in a bowl of cold water for 10-20 minutes until completely thawed. You can also thaw them over night in a bowl in the refrigerator.
  • Pat Dry: Thoroughly patting them dry with a couple of sheets of paper towel is important before you season and cook. If there is too much water left in the scallops, it will release while cooking and they’ll simmer instead of sear.
  • Sear: When the scallops are done they’ll have a beautiful crust on each side and the center should be milky white, or opaque. Internal temp will be 130 degrees Fahrenheit.

How to Store Scallops:

  • Serve: Scallops should not be left at room temperature for more than 2 hours, for safety reasons.
  • Store: Store leftovers in the fridge in an airtight container for up to 3 days.
  • Freeze: You can freeze cooked scallops for up to 3 months, but do not add the sauce before freezing. Make the creamy garlic sauce fresh when ready to serve.

Ingredients

  • 1 Tablespoon olive oil
  • 1 pound scallops
  • 3 garlic cloves minced
  • 2 Tablespoons olive oil
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ cup parmesan cheese
  • 1 cup spinach chopped
  • ½ cup sun-dried tomatoes

Instructions

  • In a medium-sized skillet over medium-high heat, add the oil and let heat until it starts to smoke. Sear scallops for 3- 3 1/2 minutes on each side until they are golden brown on each side. Remove from the pan and set aside on a plate.
  • Add the heavy cream, chicken broth, garlic powder, italian seasoning, and parmesan cheese. Whisk over medium high heat until it starts to thicken. Add the spinach and sundried tomatoes and let it simmer until the spinach starts to wilt. Add the scallops back to the pan and serve over pasta if desired.

Gooey S’mores Cookies

A gooey s’mores cookie is a scrumptious mash up of small bits of s’mores pieces in a cookie that you are going to love!  The melty chocolate, sticky marshmallow and graham cracker flavor combination you love, transformed into a delectable easy to eat cookie.

Gooey S’mores Cookies

Summer doesn’t have to end when you have these cookies around. Bring the best of campfires indoors with this simple, yet not as messy twist on a classic.  Graham cracker dough provides the base stirring in semi-sweet chocolate chips and mini marshmallows to S’more perfection.

Cookies are like a warm hug and these are no exception. When you make these you’ll feel like your right back in the woods or backyard surrounded by family and friends. The smell wafting through your house will bring back memories and make everyone happy. Quick and easy without the smoke or fire!

S’more Ingredients:

These ingredients are pantry staples, whip them up right now! S’more cookies are always a hit.

  • Sugar: White sugar helps cookies brown
  • Brown Sugar: Try dark brown sugar for a richer flavor
  • Butter: Butter is always best
  • Egg: Look for Large eggs
  • Flour: Using unbleached white flour give a tender crumb
  • Vanilla: Imitation vanilla will work here as well
  • Graham Crackers: Crush the crackers with a food processor to a fine crumb
  • Baking Powder: Helps make the cookies rise
  • Salt: Table salt helps balance the sweet
  • Chocolate Chips: For fun try extra large chips
  • Mini Marshmallows: Can cut up large marshmallows if needed.

Let’s Get Baking!

These s’mores cookies are so simple to make and a family favorite!

  1. Cream: Beat the sugars and butter until super fluffy before adding in the vanilla and an egg.
  2. Crush: Either use a food processor or a gallon ziplock bag to crush the crackers very finely.
  3. Mix: In a separate bowl mix the crumbs with the flour, baking powder, and salt
  4. Blend: Add the sugar mixture to the flour mixture till thoroughly mixed.
  5. Fold: Gently stir in the chocolate and marshmallows.
  6. Bake: Drop by heaping Tablespoons on a lined cookie sheet and bake 10-12 min at 350 till golden brown.

Create the best s’mores cookie just the way you like it. All so delicious!

  1. Marshmallows: If you want to try a fun twist on these already amazing little vittles, try using cereal marshmallows. Now you don’t have to go buy a bag of Lucky Charms and pick out all the marshmallows, they actually just sell cereal marshmallows!! How fun is that?! Look for them in the baking isle with the regular marshmallows or you can buy them on Amazon. They won’t be as gooey but still oh so good!
  2. Chocolate: You can get creative here. You can use mini chocolate chips for lots of goodness all over.  Use milk chocolate chips to recreate that classic s’mores taste. Try dark chocolate chips for an intense flavor to help balance the sweetness of the marshmallow.  Don’t like chocolate? Peanut butter or butterscotch chips will do just as nicely.

How to Freeze S’mores Cookies Ahead or After:

  • Freezing Cookies:  You can freeze these in an  for 2-3 months. Simply thaw on the counter for a few hours before eating.
  • Freezing Dough: Make a double batch of dough if you desire to make them again for fresh from the freezer cookies. Drop large Tablespoon scoops onto a baking sheet and freeze for about an hour. Transfer the dough into a freezer gallon bag or airtight container. When ready to bake simply place the frozen dough on a cookie sheet and bake for 12-15 min at 350.

Ingredients

  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1/2 cup butter softened
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/3 cups flour
  • 3/4 cup graham cracker crumbs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup chocolate chips I used large chocolate chips
  • 1 cup mini marshmallows or jet puff marshmallows

Instructions

  • Preheat oven to 350 degrees. Line a cookie sheet with parchment paper and spray lightly with cooking spray.
  • In a medium sized mixing bowl, cream together butter, brown sugar, and sugar until it is light and fluffy 2-3 minutes. Add in the egg and vanilla and mix until incorporated.
  • In a food processor, or using a gallon sized bag and rolling pin, crush up your graham crackers until they are fine crumbs. In a separate bowl, add the graham cracker crumbs, flour, baking powder, and salt and whisk together. Slowly add the dry ingredients to the wet and mix on low until it is combined.
  • Fold in the chocolate chips and marshmallow bits. Scoop a heaping tablespoon of dough onto the cookie sheet. Bake for 10-12 minutes.

Mikey Pearce announces huge UK expansion plans for his plant-based kitchen

YOUTUBE star and food entrepreneur Mikey Pearce today announced the opening of his third plant-based kitchen site.

The new opening in Central Market, Tunbridge Wells in mid-September follows the incredible success the brand has seen in London and Brighton, with their first site opening just 10 weeks ago on June 18.

Mikey’s huge expansion plans include opening further sites in London, Manchester, Edinburgh and Bournemouth in the coming months.

The Tunbridge Wells kitchen will be serving their signature plant-based dishes, alongside a number of exciting new additions to the menu.

Clean Kitchen Club opened its first site during the Coronavirus lockdown, with Mikey deciding to invest £20,000 of savings made from his YouTuber career into creating what he hopes will become the UK’s fastest growing plant-based brand.

Since opening, Clean Kitchen Club has proved to be a huge success and the business is on track to turnover in excess of £1million in its first year alone.

We're Asking Too Much From NBA players

As a lifelong basketball fan, I could not contain my excitement when NBA players reunited in the bubble in Orlando, FL in July. By that point, the COVID-19 pandemic had left the globe riddled with tremendous loss, isolation, and uncertainty. As a country, we were also starting the work of coming to terms with the ugly reality of racism and inequality, and the hard fight for social justice. This year has been a lot, and we're all looking for direction, some answers, and someone to step up and give us a little bit of hope. Those first few weeks watching the players's TikTok and Instagram accounts, and seeing them reunite made me feel like we might just be getting that. I felt a sense of excitement I hadn't experienced in a long time. I was looking forward to something after months of having nothing to look forward to.

It wasn't just basketball. The NBA players vowed to use their platform to continue the conversation about the racial injustices going in in the country, while isolating from their friends and family so they could also continue to entertain us. A month later, games have been postponed not because of the pandemic but because of systemic racism and injustice.

The NBA is made up of close to 80 percent Black players. Let that sink in.

These men are not just simply trying to survive while being Black in America, they are also experiencing a global pandemic (affecting the Black and Latinx communities in the U.S. in disproportionate levels) and enduring extreme isolation away from their families during this time. All the while, fans are expecting them to compete at the highest level of basketball as the season continues in full force. And, for what? So we aren't bored at home?

As the season re-started and players went back into the locker room, many decided that if they came back this season, they would make it count, and speak up about police brutality. NBA Commissioner Adam Silver had the perfect plan to protect the league from coronavirus, but allowing them to put social justice messages on their jerseys isn't enough to support the constant fight against racial injustice. Steve Ballmer, owner of the Los Angeles Clippers with a net worth over $70 billion, tweeting about police accountability isn't enough. I appreciate NBA players continuing to keep school in session for us, but the reality is that this fight against police brutality is not their responsibility. Yes, these players are getting paid to be in the bubble and do their job, but we are expecting them to carry a lot of weight they shouldn't have to. Playing in extreme isolation away from their families with the jarring news cycle continuously asking them to step up when they have already done so much more than was asked of them. The recent boycott of games shouldn't have had to happen because we shouldn't have put these players in this position.

As a loyal NBA fan - shout out to the Beard & Brodie - I was captivated early on watching games with my grandpa and seeing the legendary Hakeem Olajuwon work his magic on the court. And so like many, I was devastated when the season was cut short earlier this year. As I began to realise what was happening around the world the devastation of the loss of the NBA season felt minimal and I simply hoped the world would "go back to normal."

We began to see the news cycle change during the BLM protests after George Floyd's and Breonna Taylor's killings. I was paying attention to something I admittedly never paid attention to in such vivid detail. The world had stopped and here we were, forced to reconcile with the harsh reality of racial injustice so many folks have the privilege of ignoring. There were countless reports of Black men dying at the hands of police that we could no longer ignore. Events like these are hard to watch but important to learn from, although we shouldn't have to get an education this way, at the expense of our Black brothers and sisters. And then another unfortunate and more importantly preventable news in the headlines: police shot another Black man, Jacob Blake of Kenosha, WI.

The frustration and pain on his face was so vivid yet there he was, doing his job, playing the game. A Black NBA player giving to us more than his country has given to him.

A day after the shooting, fresh off the Oklahoma City Thunder's win in game four of the playoffs against the Houston Rockets, as tradition goes, there was a post-game interview on the court. I watched point guard Chris Paul get asked a question about the team's win and strategy going forward in the playoffs. His response made me well up. "That's all going well, but I just want to send a prayer out to Jacob Blake and his family." It hit me like a ton of bricks. How are we allowing this? The frustration and pain on his face was so vivid yet there he was, doing his job, playing the game. A Black NBA player giving to us more than his country has given to him.

That day, I watched Los Angeles Clippers coach Doc Rivers answer postgame questions, too, where he used his time to speak about the protests in Kenosha, WI. "All you do is keep hearing about fear. It's amazing to me why we keep loving this country and this country does not love us back," he said. Rivers's father served as a police officer for over 30 years in Maywood, IL. The emotions were seeping through him, how could they not? A Black NBA coach, with a son also playing in the league, once again trying to educate fans, hoping his words might make a difference to someone.

Later in the week, I watched Wolf Blitzer interview Charles Barkley on CNN. Blizter asked Barkley what he's been hearing from the NBA players directly and Barkley responded: "Wolf, the bottom line is, it's exhausting being Black, especially when you're a celebrity. You know, I love Tom Brady but nobody asks him what's going on in white America. Nobody asks Luka Dončić what's going on in America. White players have been amazing, but they don't live with the pressure that these young Black guys are going through." A Black man in the NBA family once again educating us, describing the frustrations Black athletes experience.

We should be thankful for these men using their platform to do good and fight back against racial injustices, but the reality is that they should have to do less and our government leaders should be doing more

Chris Paul, the President of National Basketball Players Association and one of the best point guards in the game, is a Black man. He's the father of a Black boy. LeBron James, one of the best to play the game is also a Black man; a father of two Black boys. While competing at the highest levels of basketball, he helped create a voting rights group, More Than A Vote, and partnered with the Los Angeles Dodgers to make Dodger Stadium a polling place for the November general election. We should be thankful for these men using their platform to do good and fight back against racial injustices, but the reality is that they should have to do less and our government leaders should be doing more.

The shootings and killings of Black men in the U.S. aren't just a news story for these men. They live this reality in the harshest way possible.

While I will always love the thrill of playoff basketball - there is nothing like it - it's important for fans to self-reflect and realise how much even as fans and consumers of the NBA we're expecting these players to take on. To demand of them to keep running on empty, day in and day out, shows a serious lack of empathy. Do I want to see the Houston Rockets bring home a championship? Of course! Do I want to continue watching Damian Lillard disrespect everyone in his path? Why wouldn't I? Do I want to yell "Luka 100" times more in shock? What else am I doing?

But even as a fan, I can appreciate the weight of these times on players, coaches, and the league's staff. I can recognise that we are living through a nationwide awakening to racial injustice that's far more important than one playoff season. We are being asked to pay attention to the pain of Black Americans and decide how we choose to move forward as a society.

Brooklyn Nets player Kyrie Irving was right, the game is a distraction right now. If we don't use this time to allow the people that can actually make a difference with a platform, we've wasted it.

Apologies to Kyrie Irving because this is most definitely bigger than basketball.

The Second Brunette x Juicy Couture Collaboration is Here – And It’s Oh-So Good

This week, Vancouver-based apparel brand Brunette launched its second limited edition collaboration with Juicy Couture. Brimming with ‘gram-worthy tie-dye prints in pastel hues and the Canadian brand’s signature slogans, the collection feels very of-the-moment. Naturally, we wanted to find out more about the inspiration behind the pieces and how designer Miriam Alden has taken the challenges presented by the pandemic and turned them into an opportunity for brand growth and customer engagement. Read our interview below…

Tell us a little about the inspiration behind this second collection with Juicy.

The second collection is inspired from graphics and athletic brands in the late 80s to early 90s. It marries retro elements such as tie-dye with comfy/cozy [materials] to accommodate consumer wants in our current climate. One of the things we really wanted to do with this second collection was make it fresh and new – the first drop was very much 50 per cent Brunette and 50 per cent Juicy but with a retro feel. This season we wanted it to be more of something neither brand has done before while still remaining true to the natural heritage of both brands, [that being] pink colour tones and loungewear. You can really see this come through in the Varsity Crown Crest Big Sister Crew Neck Sweatshirt.

The tie-dye technique is newer for the brand – why was now the right time to introduce this?

Tie-dye has definitely been a huge trend this summer – it’s become the unofficial stay-at-home uniform during the pandemic and I think we’ll continue seeing it in neutrals throughout fall. For us, beyond the trend, it was something fresh, new and retro that tied back to the core 90s inspiration for the collection. The tie-dye technique actually works best on cotton fabrications – the effects of tie-dye look more natural if you do it on cotton versus synthetic fabrics – and this is the first collection we’ve ever launched that was 100 per cent cotton, so it felt right.

The first collection was a big success, how is the second drop shaping up so far?

While the first drop was incredible, we’ve been blown away with the response to the second drop. We launched earlier this week and have already seen a 45 per cent increase in sales online. We are just so happy that our customers are as excited about the collaboration as we are.

The collection includes all of the key WFH staples – bike shorts, sweatshirts, joggers – if you could only choose one to wear, which would it be and why?

The Boxy Tee Dress, because it’s so hard to find a good T-shirt dress! It’s versatile for summer and carries over to fall, plus I love the way it looks.

It’s been an intense few months for brands but Brunette is experiencing huge YoY growth (ROI was up 192% in July). Tell me a little about why you think that is and how you’ve been connecting with your customers at this time?

I had a self-reflecting moment when the pandemic first hit and we went into lockdown – we had gone down in wholesale because the effects of COVID caused retail to close. I decided that there were three values I wanted to maintain – one: support retailers and our customers; two: keep my team employed; and three: be transparent in our communications to maintain relationships. From there we started to focus on direct drops to consumers, focusing on our current customers and relationships, and we launched a new online personal shopping experience that offers direct-to-consumer 1:1 Zoom appointments. The way this works is that our team organizes pre-sale appointments via Zoom and then sets up a retail experience virtually. During the trial time for this technology, we received rave feedback from consumers who loved the interactive personal experience and average sales were much higher.

What have the past few months taught you as a business owner and what are you looking forward to moving forward?

The last few months have taught me so much: the beauty in the community of the Brunette team – I’ve never felt so much love from my team to fight and stick together – [as well as] going back to basics. We live in so much excess so it’s important to be thoughtful in consumption, and take more breaks to enjoy life! I’m looking forward to fall – it’s the beginning of something new for us. From our new basics collection to our vintage launches, we have a lot of quality products we can’t wait to share.
