Melissa Leong Talks About Being Diagnosed with Autoimmune Condition Pyrrole Disorder


MasterChef judge Melissa Leong has opened up about her diagnosis with a stress-induced autoimmune condition, Pyrrole disorder.

Talking to Who, Melissa explained that it took her nine months to recover, after being diagnosed a few years ago. From 2017 to 2018, the food critic hosted reality cooking competition The Chefs' Line on SBS.

Pyrrole disorder causes dramatic mood shifts, and develops when there are too many pyrrole molecules in your body. This influx can make it difficult for sufferers to absorb zinc and vitamin B6, nutrients which can help regulate mood. It can also cause hair loss and chronic insomnia, and is often linked to other mental health conditions like anxiety.

"I was extremely unwell and couldn't work," Melissa explained. "I'm in an incredible place right now, but I'm mindful every day to prioritise my health. I've learned - the hard way - not to push myself to the point where I break."

Melissa said she was able to "slowly get better" thanks to a correct diagnosis, supplements and good nutrition. During her recovery, she became interested in the "crucial emotional and health implications of food", and food as medicine, after previously struggling to look after herself. She also cited the benefits of exercise, especially pilates.

"There was a time where I'd have to psyche myself up for days just to walk to the end of my street to buy groceries, which was not a very good state of affairs at all, to be honest with you," she said.

She also stressed that she needed to be patient in her recovery: "As I'd lived my life at full throttle previously, I hadn't been very good at patience. I had to slow down, I was forced to, but it was a good lesson to learn."

The host who has been praised for revitalising MasterChef told the publication that while the show can be demanding, she's been able to juggle it and her health needs by being mindful of her limitations, having previously suffered from burnout. "I love this job though, and, while it demands a lot from me, I give it my everything. I'm also very good at saying no too."

In the interview, Melissa also addressed handling negative criticism as a person in the public eye. She said that her strategy is to "just focus on what I do well, be grateful for the positive aspects and to just own who I am".

"I've spent a very long time learning how to be comfortable in my skin and that's the best I can do. Not everybody is going to like what you do. Nobody is universally loved and I think when you can accept that you can focus on being the best version of yourself you can be."

Melissa spoke about her struggle with depression on Sharon Johal's We Are the Real Ones podcast in May. She pointed to therapy, exercise and meditation as strategies for managing her mental health.

"The only person who can pick you up and put you back together and help you navigate all of the struggles in life is you."

But she also emphasised the importance of being honest and engaged with other people: "Empathy and vulnerability is really powerful. Kindness is really powerful."

On MasterChef, she said, she has a codeword with the executive producer for when she's feeling overwhelmed and needs a moment to herself.

"If I need a day like that where I just need that little bubble of time - it could be 10 minutes - I will tell them and they will find the next available opportunity for me to just have a minute. It doesn't take long, it could just be five minutes, just to kind of be quiet and then you gather yourself and keep going."

Summertime is in full swing and our grill is full of smoky tender meat like my grilled barbecue chicken.  Meat that good begs for an incredibly delicious side, like these family favorite baked beans.  The best part is, making them from scratch is so simple!  From beginning to end you will find that you are using familiar ingredients that you love.  This will be a recipe you end up memorizing because it is such a huge hit and you will make it again and again.

Homemade Boston baked beans are packed with sweet and savory flavors the whole family will go crazy over.  The sweetness from the brown sugar and molasses keep you craving more. The savory bacon adds incredible flavor and crunch to the creamy sauce and tender baked beans.  If you are looking for an outstanding made from scratch favorite, you must try this recipe!

Ingredients in Homemade Baked Beans:

The sweet and tangy flavors in these baked beans are so perfectly balanced and insanely delicious! The best part is how easy it is to create using all simple ingredients you know well!

  • Dried beans: Navy beans or northern beans work great!
  • Bacon: Crispy, chewy, and salty bites of heaven in these beans.
  • Green bell pepper: Slightly bitter taste to balance the sweet and tangy flavors.
  • White onion: Dice finely so it blends well.
  • Ketchup: Adds both sweet and tangy flavors.
  • Brown sugar: Adds sweetness.
  • Molasses: Even more rich sweetness!
  • Worcestershire sauce: Tangy flavor in the creamy sauce.
  • Water: You can either use fresh water or some of your soaking water.

How to Make the Best Baked Beans:

Making baked beans from scratch is so easy you will wonder why you have never done it before!  It is so simple and will become a favorite to make and take or just enjoy at home!

  1. Soak Beans: Start by adding your beans to a container and filling with water until the beans are covered with an inch of water. Soak the beans for 12 hours or overnight.
  2. Cook and drain beans: Rinse the beans and place into a large pot. Fill with water until completely immersed and bring to a boil.  Reduce the heat and simmer for one hour or until beans are tender.  Drain the beans and rinse. Return the beans the pot.
  3. Fry Bacon: In a medium saucepan add the bacon and cook until crispy. Remove the bacon with a slotted spoon.  Add in the onion and green pepper and sauté until tender.
  4. Combine ingredients: Add the bacon and the onion and green pepper to the large pot. Then add in the ketchup, brown sugar, molasses, Worcestershire sauce, and water.  Mix and add more water if needed.
  5. Bake: Preheat oven to 300 degrees. Add the beans to a 9×13 inch dish and bake covered for 2 hours.  Remove the foil the last 30 minutes.

Easy Tips for Baked Beans:

This comfort food is a simple way to liven up any summer meal.  Since it is a made from scratch recipe there are a few tips to keep in mind as you are cooking.

  • Serve: These baked beans are great when paired with hamburgers and hot dogs, so even your kids will love it!
  • Do not add salt: Resist the urge to salt the water as you soak the beans.  Adding salt will keep the beans from getting tender.  If you feel the need to add salt, wait and add it along with the ketchup and other sauces at the end. However, keep in mind your bacon will be salty and taste before adding to much salt.
  • Quick soak: If you are short on time and do not want to wait 12 hours to soak your beans, you can do a quick soak.  You will pour beans into a pot of cold water.  Then bring the water to a boil.  Now, turn off the stove and let the beans continue to soak for another hour and a half.
  • Use the soaking water: Set aside some of your soaking water to use for your 1/2 cup water later in the recipe.

Storing Made from Scratch Baked Beans:

Baked beans are a great dish to enjoy at home or to pack and bring with you on a picnic.  They also make great make ahead camping food if you are out enjoying nature and are looking for a hearty meal.

  • Make ahead: These beans will last 3-4 days in the refrigerator.  So they are great to make ahead and pack in a heavy duty cooler or RV refrigerator.  Then, just reheat over a campfire.
  • Freeze: Pack tightly and store in the freezer for up to 2 months. Word of warning the beans will be even softer after freezing and thawing.
  • Reheating: Heat in a microwave stirring every 30 seconds, on the stove top over low heat with a splash of water, or in the oven covered with aluminum foil at 350 degrees for 20 minutes or until heated throughout.

Watermelon and mint are a classic pair!

Popsicles are also incredibly easy to infuse using your favourite full-spectrum CBD oil tincture. Unflavoured tinctures typically work best so that the flavours of your popsicles aren't compromised.

Watermelon Mint CBD Popsicles

Notes

For this recipe, use an unflavored full-spectrum hemp-derived CBD tincture that contains 24 milligrams of CBD per milliliter (or about 60 milligrams of CBD per ½ teaspoon). This will add the equivalent of about 10 milligrams of CBD to each popsicle.

Ingredients

  1. ½ small seedless watermelon ⁣
    10 mint leaves
    1 teaspoon fresh-squeezed lime juice
    ½ teaspoon unflavored full-spectrum hemp CBD oil tincture
    ½ ounce organic light agave nectar

Directions

  1. ⁣Cut the watermelon in half. Begin to scoop out the watermelon flesh into the bottom of a blender or food processor. Add the mint leaves, then purée for 1 minute or until the watermelon chunks turn into juice.
  2. Using a fine-mesh strainer, separate the pulp from the juice over a 24-ounce Mason jar. Repeat this step to fine strain the liquid as best as possible. Discard the pulp and then set the Mason jar aside.
  3. Rinse out the blender with clean water, dry, then add the watermelon mint juice back into the blender. Add the CBD tincture, lime juice, and agave nectar, then blend on high for 10 to 15 seconds to set the emulsion.
  4. Begin to pour the watermelon mint CBD juice into six popsicle molds, making sure to distribute the liquid as evenly as possible. Insert the popsicle sticks, then place them into the freezer. During the first couple of hours of freezing, gently agitate the sticks in each mold to help prevent separation, then freeze overnight.
  5. The next day, remove the pops from the molds. The popsicles should have a layered look. Enjoy immediately or place them into cellophane bags and store in a zip-top freezer bag for later. Immediately wash the molds and create another batch if needed.
  6. Pro tip: if you’re having trouble separating the popsicles from the molds, fill a mug with warm water and then dip each mold into the warmed water for a few seconds to help slide the popsicles out.

Exclusive: Chanel Unveils Top Model-Studded Campaign for New Métiers d’art Collection

Today, Chanel is unveiling its spectacular new campaign for its 2020 Métiers d’art collection, featuring an impressive roster of some of the world’s top models – and FASHION has the exclusive first look at the images.

Directed by the legendary Sofia Coppola, the campaign was shot by Melodie McDaniel in 31 rue Cambon and the apartment’s iconic mirrored staircase provides a stunning backdrop to the photographs. It’s fitting that both Coppola and the staircase should be involved in the campaign – when the collection was shown on the runway at the Grand Palais back in December, Virginie Viard worked with Coppola for the show’s decor, recreating Mademoiselle Chanel’s iconic apartment (including the staircase) for the event.

“We thought about the original shows that were held at 31 rue Cambon, and how great it must have been to see the models walking by so close, and the setting by Coco’s mirrored staircase, which always gives me a thrill to see,” says Coppola in a release.

Gigi Hadid, Mona Tougaard, Vittoria Ceretti, Rebecca Leigh Longendyke, Anna Ewers, Ola Rudnicka, Pan Haowen and Blesnya Minher feature in the campaign, which tells the story of a journey from the apartment to La Coupole in Paris, a restaurant frequented by the late Karl Lagerfeld and his friends for nights filled with fine fare and dancing.

The 2020 collection itself was the first Métiers d’art collection to be produced solely by Viard for Chanel following the passing of Lagerfeld last year. Of the collection, FASHION’s editor-in-chief, Bernadette Morra, who was at the show, wrote that Viard “respectfully riffed on Coco’s signatures with a dash of modern flash, thanks to the exquisite skills of beading and feather houses Lesage and Lemarie, which Chanel owns. There were sequined and lurex jumpsuits and coats sash-tied with lavish wheat beading, ribbons and chains. A black/white jacket split down the middle nodded to Chanel’s two-tone spectator pumps. A tie-dye effect, inspired by a pink tweed suit created by Gabrielle Chanel in 1960 and lined in black, blue, pink and mauve tie-dye, gave a nice jolt to tweed suits and a chiffon dress trimmed in feathers. Miniature bags were playfully worn as jewellery. A golden cage purse references a bird cage given to Coco by one of her seamstresses and remains in her apartment.” Many of these elements are seen in the pieces chosen for the campaign.

Fusing the legendary history of the house with Viard’s vision for the future of the maison, the 2020 Métiers d’art collection is one for the books.

The collection will be available to purchase from July 7.
