Cheekbone Beauty Teams Up With Métis Artist Christi Belcourt on a Limited Edition Holiday Box

The holidays are right around the corner, and if you’ve got a beauty lover or two on your list, we’ve found the perfect present. Cheekbone Beauty, the Indigenous-owned cosmetics line run by Jenn Harper, has teamed up with Métis artist Christi Belcourt on a limited edition lipstick trio which launches today.

The vegan lipsticks are all made (and hand poured) in Canada with sustainably-sourced ingredients and are housed in biodegradable packaging. Belcourt designed the custom box which the products are housed in, decorating it with her signature floral motif meant to evoke customary Métis beadwork designs. According to a release, “this painting is called This Painting is a Mirror because it reflects to the viewer all the beauty that is already within them.”

The kit includes three rich hues: an oxblood red called MAKOC (which is the world for land in Lakota, the Siouan language), a pink nude with taupe undertones called NUNA (the word for land in Inuktitut, the language of the Inuit people) and a ’90s-inspired brown called OOXOR (the word for land or earth in the language of the TONGVA people). The shades will only be available as part of this collaboration.

Speaking of the collaboration, Harper said in a release, “At Cheekbone Beauty we share Christi Belcourt’s same zaagi’idiwin (or mutual love) for Indigenous youth. Learning we both are creating places using colour where our youth feel seen and heard. Helping them see the beauty in their reflections. We share a strong appreciation for all of creation. We are overjoyed to have this opportunity to work with an iconic Indigenous artist.”

Plus, $5 from every purchase will be donated to The Onaman Collective, which was formed in 2014 by Belcourt, Isaac Murdoch and Erin Konsmo, “to preserve and recover traditional knowledge, develop traditional art skills and create new ways for traditional teachings in the arts to carry on within the next generations through the youth.”

Tater Tot Casserole

This is a tried and true family favorite. When you need a quick and easy recipe that everyone will love, this is the answer. From the creamy ground beef sauce all the way up to the crispy tater tots, this recipe is as deliciously cozy as it gets. It takes less than 15 minutes to assemble, so you always have time to make a homemade meal for your family. Trust me, they’ll love this one!

What is a Cowboy Casserole?

Cowboy casserole is a true crowd-pleasing recipe. It’s made by layering a creamy ground beef sauce, sweet corn, and cheddar cheese into a casserole dish. Then it’s topped with tater tots and baked until the casserole is bubbly and the tots are nice and crispy. It’s pretty hard to resist.

What do you Need To Make Easy Cowboy Casserole?

  • Ground beef: lean is best.
  • Onion and garlic: flavor!
  • Diced tomatoes: we use canned as the juices help create the sauce.
  • Sour cream: makes the sauce so creamy. You can sub plain yogurt if you’d like.
  • Corn: we use frozen corn but canned corn works, too.
  • Cheddar cheese: Use aged for the best flavor. Or try a mix of white and orange cheddar.
  • Tater tots: the crispy topping that is the best part about a cowboy casserole.

Time to Make a Casserole!

This really is such an easy recipe!

  1. First: Start by cooking the ground beef until it’s only a little bit pink. Then add some onions and garlic and let them cook until the beef is fully cooked.
  2. Next:  Mix in a can of diced tomatoes and some sour cream then season that creamy, beefy sauce with salt and pepper.
  3. Last: Once the beef is ready, you’ll put it into a casserole dish and top it with corn, cheese, and tater tots

Variations to Try

  • Protein: Swap the ground beef with ground chicken.
  • Beans: Add some black beans.
  • Topping: Use curly fries instead of the tater tots.
  • Seasoning: Add some taco seasoning for a Tex-Mex version!

Can this Casserole Be Made Ahead Of Time?

Yes! This casserole can be prepared and assembled 24 hours in advance. Cover and store it in your fridge until you’re ready to bake it. You’ll want to add a few minutes to the cooking time.

Tips for Making the Best Cowboy Casserole

You might notice that the oven temperature in this recipe is quite a bit higher than some other cowboy casserole recipes. There’s a good reason for that!

We bake our casserole at the temperature that’s recommended for cooking tater tots. This ensures that the tots get nice and crispy because nobody wants soggy tater tots.

Ingredients

  • 1 pound lean ground beef
  • 1 medium onion minced
  • 3 garlic cloves minced

Instructions

Steph Claire Smith Opens Up About Falling Pregnant With PCOS & Fears of Miscarriage

You often hear new mums say one of the hardest things about their first pregnancy is the unknown. You don't know what's going on with your body, you have zero idea what's happening with your emotions, and each trimester brings new firsts that are simultaneously exciting and somewhat scary.

There's no doubt that growing a life inside of you is a beautiful thing, but it's not without its moments. Every woman's pregnancy journey is different, and each has their own struggles and celebrations that we don't often see from the outside.

As we found out when KIC founder and model Steph Claire Smith opened up on the podcast she co-hosts with Laura Henshaw, about falling pregnant after being diagnosed with PCOS (Polycystic Ovary Syndrome) and the very confronting realisation that with every pregnancy comes the possibility of miscarriage.

On Falling Pregnant After Being Diagnosed With PCOS:

"I'll start with the polycystic ovaries. I've never really spoken about it, I mean, I've spoken openly about it but I've never really gone into detail about it," she began.

"For my experience, and I know everyone is really, really different. I came off the pill and I was not on any kind of pill or anything and so I was expecting my period to come back and it was about a year and I still hadn't got my period. I ended up getting checked out and it turns out I had cysts on my ovaries and that was the reason I wasn't getting my period and I was starting to get all the other symptoms around it.

Steph went on to explain how lucky she was to be already living such a healthy lifestyle before being diagnosed as that's one of the ways you can help yourself and minimise the symptoms - eating a nice balanced diet, staying active and obviously working with your health professional.

She also added that she tried alternative methods when it came to getting her period back. "The other thing I researched and that I decided to go down the path of was acupuncture. For me, it was something that really helped, whether it was just the timing and everything else I was doing alongside it that helped, but I got my period back."

"My biggest concern back then when that happened [being diagnosed with polycystic ovaries] and it was also around the same time that I ended up having to get some pre-cancerous cells removed as well after having a pap smear. I ended up having the procedure and having them removed and all of that happened within months of each other."

"So I just started to feel like 'omg, something's not right with me down there', 'am I going to be able to get pregnant in the future'. I mean what I know from PCOS, the research I'd done and the people I'd spoken to, obviously if you're not ovulating and you haven't got your period it can make it harder, doesn't mean you can't get pregnant, but it can make that a little bit harder."

Steph finished up by explaining that even after she got her period back, sometimes the fear still creeps into the back of your mind.

"So yeah I was just so keen to get it back. So once I got my period back I was so happy and it started to come back super regular and for the last couple of years, it's been almost to the day regular. So I'm really grateful and fortunate. Even knowing that and that technically I should be in a good place, it's definitely still in the back of your mind when you start trying, you know, 'are we actually that fertile?' like because we've never tried this before. We've spent our whole relationship trying not to get pregnant, like how are we going to go now that we're trying? So I think that's why we decided to start when we did because we were both in a position where if it happened straight away amazing, and if it took a while that's fine, too."

On the Lingering Fear of a Miscarriage:

Another real fear that comes along with pregnancy is the fear of miscarrying, especially in the first trimester. And while it is super common, it's not very wildly spoken about. So Steph chose to spoke about her fears in the hopes of opening up the dialogue further and normalising the conversation.

"I think the underlining thing that I noticed in the first trimester was this weird energy between josh and I where, obviously when we found out we were over the moon excited, happy, this is the most amazing thing ever, and then we went through this period where you know, even with my first GP appointment, she reminded me that one-in-four women miscarry and I was like 'Oh yeah, I know that we've spoken to people about that', and I was quite educated on that, how could I forget that."

"Hearing it kind of put so bluntly, I was like "Mm ok" and then that just sat in the back of my head literally through the whole trimester. You know the baby's not here yet so there's still obviously always the chance of something going wrong, but there's definitely a higher chance in the first trimester, so it was a weird time because we were both really excited but we were also in some way holding back our excitement because we were both a little bit nervous about something like that happening," she said.

Adding: "It was really exciting, but it was also terrifying at the same time particularly in the earliest stages."

When went on to talk about the moment where she felt that fear lift after her eight and 13-week scans. "There was a little bit of a moment at eight weeks where I met my obstetrician and she did a scan and we heard the heartbeat and that was really amazing. That for me was reassuring, but I still knew there was a month to go in the first trimester, but it did help a little bit. Coming up to the 13-week scan it was really scary because I knew how big of a deal it was, and I knew we hadn't heard the baby's heartbeat and you know it's so small so you can't feel anything yet, it's not like I could feel it kicking and we knew it was moving. So I think that's why we were still nervous by the 13-week scan."

"I got a sense of relief when he played the heartbeat and I just started crying in the appointment because it was just like 'omg, it's moving, it's got a heartbeat', and he did all the checks they do to make sure that all its kidneys and all its different vital organs are developing well and size-wise it's growing well and all that sort of stuff. It was really beautiful, it ended up being a really beautiful appointment. That's definitely when I started to breathe a little bit and enjoy it a lot more. It definitely felt a lot more real from that point."

We've gotta say, it's really refreshing to hear Steph talks so candidly about her pregnancy journey and not shy away from what are traditionally 'taboo' topics. More of this, please!

Slow Cooker Short Ribs

According to definition, short ribs are a cut of beef taken from the brisket, chuck, plate, or rib areas of beef cattle. They include a short portion of the rib bone, thus the name short rib. This cut of meat is actually pretty tough but once it reaches fork tender, it’s amazing. Your whole family will love this delicious dish!

This is why beef short ribs were meant for long, slow braising at a low heat. The longer you cook them the better they become, if you try to cook them fast, they’ll remain tough. Cooking them in the slow cooker may just be one of the best ways to get them to the perfect level of fall-off-the-bone doneness. After cooking away for hours in your crockpot, short ribs turn from chewy and tough to melt-in-your-mouth tender. They’re a perfect winter meal. Add a vegetable some rolls and your set for a hearty week day or Sunday special meal.

Slow Cooker Beef Short Ribs Ingredients

The ribs slow cooked with the sauce imparts the best flavor. You are going to love it!

  • Beef Short Ribs: 8-10 should fit nicely in your slow cooker
  • Salt and Pepper: To taste
  • Olive Oil: To Taste
  • Carrots: Use large carrots, not baby carrots. Large carrots have more flavor
  • Beef Broth: To have a good beefy flavor don’t substitute for other broth.
  • Garlic: 3 cloves minced, sounds like a lot but trust me it’s needed.
  • Tomato Paste: Imparts strong flavor without the extra water.
  • Worcestershire Sauce: Gives immense flavor
  • Italian Seasoning: One of my all time favorite spice combinations, it’s so good!

Cooking Beef Short Ribs

Quick prep work and then let the slow cooker do all the work!

  1. Sear: Salt and pepper the short ribs and sear in the olive oil in a skillet over medium high heat. Make sure to do all sides. When they have a nice golden crust on all sides place in the slow cooker and add the carrots on top.
  2. Sauce: In a small bowl whisk the beef broth, garlic, tomato paste, worcestershire and italian seasoning. Pour the sauce over the ribs
  3. Cook: For best results cook on low for 8-10 hours.

Tips for the Best Short Ribs

It’s really hard to mess these up, unless you don’t let them cook long enough.

  • Ribs: You can use short ribs with the bone in or without. Either will be amazing
  • Veggies: You can add onion and celery along with the meat.
  • Searing: You may be tempted to skip the searing step, Don’t! It caramelizes the surface of the meat enhancing the flavor. So good! Worth the extra time.
  • Tough:  If you short ribs turn out tough, that means that they didn’t cook long enough. Long and slow is key and they need to reach an internal temperature of 180-205 degrees F. This is when the heat is able to break down the connective tissue that makes them tough.

How to Make a Gravy

The sauce will create a mouth-watering gravy you don’t want to skip.

  1. Cool: After the meat has cooled for about 15 min in its juices remove the meat and cover.
  2. Drain: Let the drippings cool for another 5 min till the fat begins to rise. Spoon the fat off of the liquid and discard.
  3. Boil: Turn the Slow Cooker on high or you can pour the drippings into a saucepan on the stove over high heat.
  4. Thicken: Mix 2 Tablespoons of Cornstarch and 1/4 cold water together. Pour into the drippings and stir constantly till nice and thick.

Ingredients

  • 8-10 beef short ribs
  • salt and pepper
  • 1 tablespoon olive oil
  • 5 large carrots sliced
  • 1 cup beef broth
  • 3 cloves garlic minced
  • 1/4 cup tomato paste
  • 1 Tablespoon Worcestershire Sauce
  • 1 Tablespoon Italian Seasoning

Instructions

  • Salt and pepper the beef short ribs. Heat a large skillet with the olive oil over medium high heat. Add the short ribs and sear each side for 1-2 minutes or until they have a golden brown crust. Remove from skillet and add to the slow cooker and add the carrots on top.
  • In a small bowl whisk the beef broth, garlic, tomato paste, Worcestershire sauce and Italian seasoning. Add to the slow cooker.
  • Cook on low for 8-9 hours or high 4-5 hours.
