Vegetable Egg Rolls

Vegetable Egg rolls are filled with colorful, crunchy flavorful veggies and fried till golden crispy brown. These are a homemade take on a classic take out favorite. Super easy and so delectable you’ll never buy them again!

Always an irresistible finger food, they’re perfect for all occasions. Pair these with Easy Fried Rice and Chicken Chow Mein for delicious copycat versions of your favorite take out dishes.

Vegetable Egg Rolls

These are so satisfying with their crunchy savory insides and crispy golden outsides. It’s truly an explosion of texture and flavor. Everyone loves finger food and egg rolls are certainly a favorite. Take them to a party, make them for a special dinner or just because, they will be the hit of the party.

The best part of this recipe is how simple and easy it is. Who knew right?! It’s even simple to roll them so don’t stress it. I’ve got pictures to show you exactly how. Once you make these, you’ll do it again and again.

Egg Roll Ingredients

Fresh tasty veggies fill these delish bites.

  • Oil for Frying: Peanut or Canola oil are great for frying
  • Purple Cabbage: Adds color and crunch
  • Green Cabbage: Classic cabbage used in egg rolls
  • Mushrooms: Adds richness and umami flavor
  • Red Bell Pepper: Love the vibrant red and taste in these.
  • Green Pepper: Sturdy pepper for frying
  • Carrots: Shred your own or buy pre packed shredded carrots.
  • Soy Sauce: Use regular or low sodium soy sauce.
  • Sesame Oil: Savory and extremely flavorful
  • Egg Roll Wraps: Find in the refrigerated section of your produce area.

Making Egg Rolls

Super simple and quick.

  1. Mix: In a medium sized bowl add the cabbages  mushrooms, bell peppers, carrots, soy sauce, and sesame oil and mix to fully coated.
  2. Fill: Lay the egg roll wrappers on a clan surface. Spoon the mixture in to the middle. Fold like a burrito and seal the edges with a little bit of water.
  3. Fry: In a medium sized skillet heat 1/2 inch of oil to 350 degrees. Place the egg rolls seal side down first and fry 2-3 minutes. Flip and fry on other side till golden and crispy brown. Remove from the pan with a slotted spoon to a plate lined with a paper towel. Serve with dipping sauce of choice.

Tips and Variations for Veggie Egg Rolls

One of the things I love about this recipe is how versatile it is. Mix it up and make it your own. You can’t go wrong!

  • Veggies: You can mix and match the vegetables to your liking. Use a Coleslaw premix, or Broccoli slaw, edamame  and or green onions,  go ahead experiment!
  • Heat: Add fresh garlic and ginger for a nice kick
  • Sauté: If it’s too crunchy for you, sauté your veggies first to soften them to your liking.
  • Chop: Cut your veggies to the same size and keep bite sized for easier eating.
  • More: If you sauté your vegetables first, you can add mung bean sprouts, or noodles to add more texture.
  • Cover: After you open the egg roll wrappers, cover them with a damp paper towel to keep them moist. They dry out fast.
  • Serve: Pick your favorite sauce to go with these, from simple soy sauce to sweet Thai chili sauce.

Bake and Storing Egg Rolls

  • Baking: Frying is best but if you’d like to bake these place in a single layer on a  lightly greased baking sheet. Lightly brush the outsides with vegetable oil.  Cook in a preheated oven at 425 degrees for 15-20 minutes, flipping once half way through. They will be golden but not a deep brown and probably not as crispy but still oh so good!
  • Storing: These are truly best eaten fresh from the fryer, once they’ve cooled of course. But if you do have left overs let them cool completely and store with layers of paper towel in between to absorb any moisture. Egg rolls will keep about 2-3 days in the fridge. When ready to reheat,  place in a single layer on a baking sheet and bake for 15-20 minutes at 350 degrees. They’ll be tasty, just not as crispy.

Ingredients

  • oil for frying
  • half a head purple cabbage sliced
  • half a head green cabbage sliced
  • 4 oz mushrooms sliced
  • one small red bell pepper sliced
  • one small green bell pepper sliced
  • 1 cup shredded carrots
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 6-8 egg roll wraps

Instructions

  • Fill a medium sized skillet with about 1/2 inch of oil and preheat to 350 degrees.
  • In a medium sized bowl add the cabbage, mushrooms, bell peppers, carrots, soy sauce, and sesame oil. Mix together until the sauce is coating the vegetables.
  • Lay the egg roll wraps on a clean the surface. Spoon the mixture to the middle of the wrap. Start by folding up the bottom corner, then fold in the sides and roll up and seal with water on the edge.
  • Fry for 2-3 minutes or until golden and crispy brown. Remove from oil with a slotted spoon and lay on a paper towel lined plate. Serve with soy sauce for dipping if desired.

Apple announced a Billie Eilish documentary
A multiple Grammy winner at just 18, Billie Eilish is the subject of a documentary that will be landing on Apple TV+ early next year. Titled Billie Eilish: The World’s A Little Blurry, the film is directed by Oscar-nominated filmmaker RJ Cutler and is slated for a theatrical and streaming release in February 2021. The singer’s debut album “When We All Fall Asleep, Where Do We Go?” was released in 2019, catapulting her to global fame and becoming the best-performing album of the year. No word yet on what stage of Eilish’s rise to fame is chronicled in this documentary, but stay tuned for details.

Lili Reinhart released a book of poetry
Riverdale actress Lili Reinhart has spoken publicly about how she likes to write “countless poems” when she’s “going through something — depression, anxiety, a breakup.” Her first collection of poems—written over the past five years—has now been released. Titled Swimming Lessons, the book of poetry explores “the euphoric beginnings of young love, battling anxiety and depression in the face of fame, and the inevitable heartbreak that stems from passion.”

Anthony Vaccarello and Helmut Lang teamed up for an art collaboration
Saint Laurent creative director Anthony Vaccarello has teamed up with reclusive (and now retired) Austrian designer Helmut Lang on a series of sculptures made of deadstock fabric. Taking the shape of floor-to-ceiling poles, the artworks also utilize unused hardware from Vaccarello’s past collections, mixed with pigmented resin and aluminium. The sculptures will be on display from September 30 to October 30 at Saint Laurent’s concept store, named Rive Droite, before moving on to Los Angeles where they will be available for purchase.

Canadian actress Iman Vellani joined the Marvel Cinematic Universe
Iman Vellani, an 18-year-old actress from Markham, Ont., has been cast as Kamala Khan aka Ms. Marvel in an upcoming Disney+ live action series based on the superhero. The character of Ms. Marvel first appeared in the comic books in 2014, and as a Pakistani-American teen based in New Jersey, is the first Muslim character to star in her own title in the franchise. And Vellani’s not the only Canadian actress taking on a superhero role. Last month, it was announced that Tatiana Maslany would be playing She-Hulk in another upcoming Disney+ series.

And ICYMI: Inside Out, Canada’s largest LGBTQ+ film festival, has gone virtual for 2020. Read more about the online festival, which runs till October 11, here.

My Favorite Caesar Salad Recipe

My Favorite Caesar Salad Recipe

The reason this is my absolute favorite is really because of the Homemade Croutons and Dressing. It’s so fresh and vibrant and easy to throw together. Everyone loves a good Caesar Salad. It’ll rival the best restaurant’s Caesar Salad for sure.

The best thing about this Salad is that goes with everything. From soups to BBQ, if you need a quick salad to balance out your meal, this is it. Caesar Salad’s unique flavor and ingredients compliment any main dish. It’s always a favorite.

Caesar Salad Ingredients

  • Romaine lettuce: Make sure your romaine is crisp and fresh.
  • Parmesan Cheese: I prefer Shaved Parmesan, do it yourself or buy it pre-shaved.
  • Caesar DressingMaking your own Authentic recipe is the best way to go.
  • Croutons: Homemade croutons are the only way to go.

Assembling my Favorite Caesar

  1. Lettuce: If you are using bagged chopped Romaine, make sure your pieces are of equal size. If you use heads of romaine, chop your lettuce into bite sized pieces, wash thoroughly and drain. Pat it dry with paper towels.
  2. Cheese: Add the cheese and toss gently to distribute
  3. Right before Serving: Add the dressing and toss to coat, start with less then you think you need and add more to your liking. Last add those crunchy croutons.

Where Did Caesar Salad Come From?

  • An Italian Chef is to thank for this incredible creation, not a Roman emperor. Chef Caesar Cardini immigrated to the United States and opened a restaurant in San Diego California and then later in Tijuana Mexico in the 1920’s. On a particularly busy 4th of July weekend, he was running low on supplies and out of desperation created the signature Caesar Salad.
  • Julia Child, who visited Caesar’s restaurant with her parents, recounts how Caesar himself rolled a big cart up to their table, and made a Caesar salad for the family. She says, “It was a sensation of a salad from coast to coast, and there were even rumblings of its success in Europe.” (From Julia Child’s Kitchen, 1975).

Variations and Tips

  • Protein: Turn this into a main dish by adding chicken, fish, steak, chickpeas or hard boiled eggs.
  • Veggies: Feel free to add more veggies, it won’t be classic but will still taste yummy. Add tomatoes, cucumbers, peppers, radishes or avocado.
  • Ahead of time: Prep all the ingredients ahead of time but do not assemble till ready to serve to avoid soggy limp croutons and lettuce. I always use the rule less is more when it comes to dressing. Start with less and add more as needed
  • Storage: Leftovers do not store well as the croutons will go limp and the lettuce could go soggy. If you’re afraid you’ll have leftovers serve the dressing and croutons on the side so you can save the lettuce and cheese for another day.

These Expert-Approved Tips Will Help You Fight Colds and COVID-19 and Boost Your Immune System

It's officially cold and flu season, and coupled with the coronavirus pandemic, you may be feeling stressed and worried about getting sick. You've probably heard people say that in order for your body to have the best chance at fighting off viruses like the flu and COVID-19, you should focus on "boosting" your immune system. This isn't entirely wrong, but unfortunately, taking one millennial-friendly packaged supplement here and there won't do the trick.

What Is the Immune System and What Does It Do?

Before going any further, it's important to know what your immune system is and its purpose. "Our immune system is essentially a system in our body to allow us to stay healthy, fight infections, and to heal when we come in contact with viruses, pathogens, or if we simply just get ill," Nicole Avena, PhD, assistant professor of neuroscience at the Mount Sinai School of Medicine, told POPSUGAR. Our immune system keeps us safe and well, "and a lot of things go into making it function well," Dr. Avena said. Your diet and nutrition, stress, sleep, and exercise all impact how well our immune system works. And for some, it just comes down to genetics.

How to Strengthen Your Immune System

Making changes to your lifestyle such as getting the recommended seven hours of sleep each night and reducing your stress are two proven ways to improve your immunity as poor sleep and high levels of stress negatively impact our body's ability to fight infection, Dr. Avena explained. "And so I tell people, 'Don't worry so much about taking a supplement, or taking some special tea, or whatever latest drink is going to affect your immune system. It's really just a matter of just trying to chill out and get more rest,'" she explained.

Adults should aim for seven to eight hours of sleep each night, because when we don't get enough sleep, "our body is essentially having to work overtime during our waking hours just to keep it functioning correctly," Dr. Avena explained. Caffeine can make you feel like you're functioning great, but ultimately, a lack of sleep means the resources that would go to helping your body be prepared to fight diseases, conditions, and pathogens is directed toward helping you get through the day. It's like playing a team sport but being short a few players, Dr. Avena said. You may be able to win (in this case fight off illness and pathogens), but it's going to be a lot harder.

The same goes for stress. If you're experiencing chronic stress, your hormones, specifically cortisol (aka the stress hormone), can be impacted, which can lead to more problems that can be "disruptive to your immune system," Dr. Avena said. "So the stress, I think, is really something that can be difficult for a lot of people to manage, but it's very important to keep under control, because it can really open a Pandora's box of problems when it comes to helping support your immune system."

In addition to getting more sleep and reducing your stress levels, exercise can also help support your immune system, according to Dr. Avena. When you exercise, your body gets stronger. Dr. Avena explained that the better shape you're in, the easier it is for you to exist, meaning your body doesn't have to work as hard to make sure your joints and cardiovascular system, for example, are functioning at an optimum level. The best part is, any type of movement will help strengthen your immune system. You can run, you can walk, you can do 10 minutes of stretching - "it all counts toward helping to keep you in shape and to keep your immune system being able to function as best it can," Dr. Avena said.

What Foods Can Help Strengthen Your Immune System

Food can also impact how well your immune system functions, but there isn't an exact list of items you should eat to improve your immunity. Dr. Avena recommends limiting the amount of processed, high-salt, and high-sugar foods you're consuming. "All those things are going to have a negative impact on our health, and in turn, on our immune system," she said. You can still have foods like donuts and chips, but like most things, it's about balance. Dr. Avena emphasised getting a range of nutrients in your body and not following restrictive diets as they can lead to nutrient deficiencies, which can have a negative impact on how your immune system functions.

Consuming foods that naturally contain vitamin C (citrus fruits, leafy greens, and sweet potatoes, for example) and zinc (red meat, legumes, and nuts and seeds) can help. If you aren't getting these nutrients from food sources, supplementing with vitamin C and zinc can work, Dr. Avena said. When possible, she recommends trying to get these nutrients from food as your body will absorb and utilise them better. Taking a single supplement won't suddenly boost your immune system, and Dr. Avena recommends taking a holistic approach and making lifestyle changes in order for your immune system to function well.

Getting more sleep, reducing stress, exercising, and eating a variety of nutrient-rich foods, are your best bet if your goal is to have a stronger immune system. "You might find that you're able to accomplish what you need to do for your health just by making the lifestyle changes in and of themselves," Dr. Avena said. And as always, if you have any questions or concerns about your health, consult a medical expert such as your primary care doctor.

The AGO is Teaming Up With a Female-Focused Art Gallery for a Virtual Pop-up

According to a recent article in Artnet, female artists account for less than 2% of the art sold at auctions over the past decade. It’s an abysmal statistic but one that Toronto-based artist Nuria Madrenas wants to play a role in changing with MRKT Gallery, an online platform for female-made art.

As an illustrator herself, she realized early on in her career that there was a huge disparity between women and men in the art world. “On average, female-made art is usually sold at 40% less than what the male equivalent would be,” she says. “So not only is the sheer volume much less but also the actual value that people are placing on female-made art is much less as well. So overall there are several challenges and barriers for female artists.”

To create a space where women’s art could be represented with the aim of getting it sold, Madrenas launched MRKT Gallery in December 2019. The website now carries work by dozens of female-identifying artists in Canada, the United States, the UK, Malaysia and other countries around the world, and is partnering with the Art Gallery of Ontario on a virtual pop-up this month.

Minimalist line drawings, fashion illustrations and female silhouettes feature prominently amongst the offerings on the site, which Madrenas says are the most popular pieces. So the artists she looks to add to her expanding roster are those whose aesthetic and style matches what the MRKT consumers are looking for.

“We want to make sure when we bring on a new artist that it’s going to be a viable platform for them to actually get their work sold. Because if their style doesn’t align with what our customers are looking for then we don’t want to prohibit them from selling on other platforms that may be a better fit for them.”

Artists carried by MRKT include Toronto-based Brazilian illustrator Luiza Albertini, London-based Japanese artist June Mineyama-Smithson, and Canadian artists like Chantal Walkes, whose art explores themes of culture and identity, and Rachel Joanis, a digital illustrator known for her use of bright, saturated colours.

MRKT Gallery’s aim is to “merge creativity and commerce” by offering not only a platform for emerging artists to share their work and develop a following but also by ensuring that 50% of the profits go straight to the artist.

“We manage all the printing, framing, packaging and shipping,” she explains. “Our artists provide us with the files or the original works of art that they choose to sell, and we manage everything from there. So all the leg work is taken off their plate. And after those costs associated with it, the profits are split 50-50.”

In an effort to garner more visibility for female artists, MRKT Gallery has teamed up with the Art Gallery of Ontario (AGO) for a virtual pop-up. Starting October 7 and running for 30 days, a curated selection of 14 prints will be available to purchase on the museum’s website. The 9×12″ size prints, which typically run for $65 on the MRKT Gallery website, will be sold at an exclusive price of $50 at the AGO pop-up.

While the pandemic has decreased or entirely eliminated footfall in galleries and museums, Madrenas says people seem to be on the hunt for affordable art, considering how much time they’re now spending at home.

“People are looking around their homes and thinking ‘I need to fill this blank wall’ or ‘maybe I’ll finally get around to decorating my home office or guest room now that I’m using it more’ or whatever it may be. Also, many people are moving out of the city and into larger spaces on the outskirts of the city. With larger space comes more walls and more room for decoration.”

Here's What It's Like to Use Apple Watch's New Dance Workout Tracking App

Apple WatchOS 7 has a new feature that allows you to track dance workouts, including dance cardio, hip-hop, Latin (Zumba), or Bollywood. I already use the Workout app on my Apple Watch to track my runs and walks, so I was excited to test it out while following a dance workout video.

As long as you have an Apple Watch Series 3 and later, you can access this new feature. All you need to do is tap the Workout app on your Apple Watch (it's the green circle with the black figure running), then scroll down to Dance. This app allows you to track active calories, total calories, and your average heart rate. I tested it with two dance cardio workouts: a 30-minute PlyoJam Workout and a 20-minute DanceBody workout. This New Canadian Partnership Highlights Local and BIPOC Designers

If the focus of your new purchases of late has been on local and BIPOC designers, then the new partnership between Hudson’s Bay and INLAND is set to make that even easier. Launching today, the partnership will see the Canadian retailer offer a selection of apparel and accessory pieces from some of the country’s coolest up-and-coming brands through a dedicated shop online.

Beginning today and running until December 31, the INLAND online shop will house 44 local brands, almost 40 per cent of which are by BIPOC designers. Names include Omi Woods, Soft Focus (who recently spoke with FASHION about their newest drop of WFH essentials), Maguire, OKAYOK, Pretty Denim and more.

Speaking of the partnership in a release, Sarah Power, the founder and creative director of INLAND, said, “INLAND is a community where customers, designers and makers come together to celebrate the fabric of Canada through incredible design.
