Indya Moore Makes NYFW Debut to Open Jason Wu

New York Fashion Week is officially underway for the Spring 2021 season, though it looks a little different from past seasons. With social distancing measures still very much in effect across the States, many designers have opted to show virtually or have decided to forgo showing entirely in favour of a new fashion system. Some, however, have pressed ahead with in-person shows, including Jason Wu who showed his latest collection yesterday with Pose star Indya Moore making their NYFW debut for the brand.

Not only did Moore make their debut, they opened the Tulum-inspired show, which took place at the Spring Studios Terrace. For their turn down the runway, Moore wore a burnt orange-hued summer dress with eyelet detailing at the hem, which was accessorized with beaded necklaces, earrings and striped sandals.

Sharing a photo with Wu on Instagram, Moore wrote, “@jasonwu invited me to open his show. Thank you so much! This is the first NYFW show I’ve ever walked. I’m so proud of Jason’s line, the fabric is incredible. It’s sturdy, soft and the clothing fits like a glove. Well done!”

The show was attended by just 36 guests, all of whom were seated a safe distance apart and given custom face masks with the words “Distance Yourself From Hate” on them. According to Associated Press, proceeds from the masks will be donated to New Yorkers in need – and more than 2,000 of them have been sold since June. Furthermore, the custom black-and-white printed chairs upon which the guests sat for the event will be donated to HIV and Aids advocacy organization GMHC for use in their new dining room.

On why he wanted to hold an in-person show, Wu shared with the outlet, “I think the world needs beauty and optimism. New York Fashion Week is not over. It is strong. We’re here… We can all be safe, be gathered and still be able to celebrate.”

Here’s Why Mena Massoud Travelled Around North America For a Vegan Cookbook

Mena Massoud doesn’t believe in labels—he believes everyone is a work in progress, and that’s why he’s releasing a cookbook titled Evolving Vegan.

“When I was growing up, vegans got a bad rap of being very militant or strict—a ‘one way or the highway’ kind of deal,” he says over the phone from his home in Los Angeles. “But our world is obviously changing. We are all evolving towards the vegan lifestyle. Even humongous corporations like Beyond Meat and Impossible are multi-billion dollar companies now in a multi-billion dollar industry. So you don’t have to be vegan to eat vegan. And that’s really what evolving vegan means. Encouraging people to evolve in the right direction and eat more plant-based foods.”

Massoud first began thinking of veganism back in 2015, when he and two other actor friends in Toronto started researching animal products from the lens of the impact they had on their body.

“We were young guys in our 20s working out and wanting to get really fit, and as we started finding out how animal products negatively affected our health and our environment, we started slowly cutting things out. I cut out red meat first and then I cut out eggs and then I cut out chicken. That’s really where the idea of evolving comes from. You don’t do it all at once. I don’t encourage people to go from eating meat to dropping it all cold turkey. I encourage people to evolve in that direction and do it slowly.”

To that end, he decided to launch a cookbook—which releases tomorrow, September 15—that rounds up not just some of his personal favourite vegan recipes but also recipes from vegan restaurants around Canada and the United States. Part cookbook, part travel guide, it’s an interesting marriage of concepts.

“If I were to come out with a ‘vegan cookbook’ only vegans would buy it,” he explains. “I wanted to show people that vegan food is incredibly accessible no matter where you are in North America, whether you’re in Portland or Washington DC or New York or Toronto. A lot of people who are going to buy the book will probably recognize a restaurant or two and then they’ll have a recipe from that restaurant forever.”

Massoud first began working on the cookbook with his business partners in 2018, self-funding their travel to the various locations spotlighted in the book.

“Honestly I just put together a list of cities that I really wanted to visit. Of course New York and Los Angeles are meccas of vegan food but I had never been to Portland, Seattle, Vancouver. Before we got there, I did a lot of research, looked up reviews and different cuisines. It’s an incredibly diverse book that has Egyptian cuisine, Mediterranean, Indian, Ethiopian, Taiwanese, Chinese, Mexican. And once we got there, we made sure to get recommendations from locals.”

Having grown up in Toronto, Massoud has seen the restaurant landscape in the city shift dramatically over the years.

“The year after I graduated from theatre school, in 2015, I went vegan so I was able to discover all these incredible vegan spots that hadn’t existed before. The Planta franchise is one of my favourites. The Japanese-inspired Planta on Queen Street is a restaurant I always visit when I’m back in town.”

In addition to his cookbook, Mena Massoud also launched a company called Evolving Vegan in 2018 which functions as a social media community on Facebook and Instagram where people can post their own recipes and talk to each other.

“The whole point is to encourage people to be non-judgmental and to encourage their community to be more plant-based,” he says. “I just wanted to eliminate the labels that come with the way people eat. Vegan can be something you eat once a week or order in. It shouldn’t be a label that has this huge sense of judgment around it.”

How to Watch Burberry’s Spring 2021 Show Live This Week

This week, Burberry will hold its Spring 2021 runway show in London – without an audience. But, that’s not to say that fans of the brand can’t take in all the front row action from the comfort of their own home. Today, Burberry has announced that it will livestream its Spring 2021 show on Twitch this Thursday, making it the first luxury brand to partner with the platform in this capacity.

According to a release, the brand – which recently launched a series of Animal Kingdom pop-ups across Canada – will use the streaming platform’s Squad Stream functionality to allow several hosts to share various views of the show in one window, whilst viewers can chat with one another via the chat function.

“Burberry has always been a brand of firsts and partnering with Twitch continues this legacy,” Rod Manley, the chief marketing officer for Burberry said in a press release, which also noted that the British brand was the first to livestream a show back in 2010. “Twitch unlocks an exciting new space where our Burberry community can be digitally transported to feel like they have a virtual seat at our live show. It is an interactive experience where guests can connect with both our brand and each other whilst personalizing their viewing journey.”

Ready to take your front row seat? All you have to do is tune in to Burberry’s Twitch channel on Thursday September 17 at 8am EST.

Coffee Cake Recipe

When I first discovered coffee cake, I was surprised to find out it doesn’t actually have any coffee in it. But instead it’s a soft, moist and delicious cake laced with cinnamon streusel in the middle and on top. The sweet cinnamon compliments breakfast wonderfully and gives an extra sweet treat in the morning!

Making the Streusel:

  1. Mix Together: The cinnamon streusel is made with a mixture of flour, sugar, just a tiny pinch of salt, lots of cinnamon and butter. You can use a pastry blender to cut the cold butter into the flour mixture, or simply use your fingers if you don’t have a pastry blender.
  2. Butter Tip: You want to work the butter into the mixture such that it becomes crumbly like wet sand, but work quickly so you don’t melt the butter. Keep the streusel in the freezer until you are ready to use it. If you don’t have space in the freezer, keep it in the refrigerator.
  3. Keep it Cold: Keeping the streusel cold is important so it becomes crumbles once baked instead of melting into the cake completely.

Making the Cake Batter:

  1. Beat Wet Ingredients: This cake batter is very simple, just beat together the wet ingredients which include sour cream, melted butter, eggs, and vanilla extract. I use sour cream in this recipe, but you can replace it with yogurt or buttermilk if you wish.
  2. Sift Together: You’ll need a separate mixing bowl to sift together the dry ingredients, then fold the flour mixture into the wet ingredients until just combined. Don’t overmix the batter to avoid drying out the cake.

Assemble for Baking:

To get the classic layer of cinnamon streusel in the middle of your cake, you’ll need to do a little bit of assembling before baking.

  1. Get your cake pan ready before assembling the cake. I’m using an 8” cake pan here. Brush it with melted butter and line with parchment paper as shown.
  2. Add half the cake batter to the prepared pan, spread it into a flat layer.
  3. Add half the streusel on top, you may need to break up some of the larger clumps to spread it evenly over the cake batter.
  4. Dollop the remaining cake batter on top of the streusel layer.
  5. Use your fingers to nudge it into an even layer.
  6. Sprinkle the rest of the streusel on top.

Now your cake is ready for the oven. This recipe bakes in 45 minutes at 350°F using an 8” round cake pan.

You can use whatever size pan you have but if your pan is larger, your cake will bake faster, so check the doneness using a toothpick inserted in the middle of the cake. If the toothpick comes out clean, your cake is done.

Storing Leftover Cake:

This coffee cake can be kept at room temperature in an airtight container for up to 3 days. You can also keep it refrigerated for up to a week.

Ingredients

Coffee Cake

  • 1 ⅓ cup all-purpose flour
  • cup granulated sugar
  • ½ teaspoon kosher salt
  • ½ teaspoon baking soda
  • ¾ teaspoon baking powder
  • 1 cup sour cream room temperature
  • 2 large egg room temperature
  • 4 oz unsalted butter melted & cooled
  • 1 teaspoon pure vanilla extract

Streusel

  • ¾ cup all-purpose flour
  • ¼ cup dark brown sugar packed
  • ¼ cup granulated sugar
  • A pinch of kosher salt
  • 1 ½ teaspoon cinnamon
  • 3 oz unsalted butter cold & cubed

Instructions

  • Make the streusel by combining flour, brown sugar and granulated sugar, just a pinch of salt, and cinnamon in a small bowl, mix together thoroughly with a whisk.
  • Cut the cold butter into small cubes and add to the dry mixture. Use a pastry blender to cut the butter into the dry mixture or pinch it together with your fingers until the texture is of wet sand. Cover and freeze until ready to use.
  • Preheat the oven to 350°F.
  • Melt the butter in a microwave-safe bowl for about 30 seconds.
  • Use the melted butter to brush an 8” cake pan, line the pan with two pieces of long parchment paper and a piece of round parchment paper to cover the bottom of the pan, let the excess hang over the sides for handles. Then brush the parchment paper with melted butter as well.
  • Set the baking pan aside and allow the rest of the melted butter to cool.
  • In a medium mixing bowl, add sour cream, eggs, the cool butter, and vanilla extract, beat with a whisk until smooth.
  • In another mixing bowl, sift together the flour, baking soda, and baking powder. Add salt and sugar and whisk to distribute evenly. Then add the flour mixture to the wet ingredients. Fold with a spatula until just combined.
  • Add half the cake batter to the prepared pan, and use a spatula to spread it into a flat layer. Sprinkle half of the streusel over the top, about 1 cup. Then add the rest of the cake batter over the streusel layer in dollops and gently nudge it into a flat layer with your fingers. Sprinkle the rest of the streusel on top evenly.
  • Bake for about 45 minutes until an inserted toothpick comes out clean.
  • Let cool on a wire rack completely before unmolding the cake. To remove the cake from the pan, take a butter knife to gently loosen the side then lift the cake out of the pan using the parchment paper “handles”.

Notes

  • You can bake this coffee cake in a 9” cake pan or a 8” square baking pan but bake time will be shorter.
  • Using a springform pan will make unmolding the cake easier. But be sure to place the springform pan on a baking sheet when baking since the springform pan may leak a little bit.
  • You can substitute sour cream with plain yogurt or buttermilk.

  • Basil: Fresh basil is divine if you do use dried only use 1 Tablespoon.
  • Italian seasoning: Adds just enough spice for amazing flavor.

How to make Stuffed Tomatoes:

  1. Prep Tomatoes: Preheat oven to 425 degrees. Cut off the tops of the tomatoes and scoop out the insides being sure to leave a good edge all the way around. Place the tomatoes in a baking dish.
  2. Cook: In a medium skillet over medium high heat cook and crumble the sausage. Drain the grease and add to a bowl with the rice, one cup of the Colby jack cheese, Parmesan cheese, basil and Italian seasoning, stir to combine.
  3. Fill:  Stuff each tomato with the mixture. Top them with the remaining Colby Jack cheese and bake 15-20 min.

Tips and Variations for Great Stuffed Tomatoes with Sausage:

  • Tomatoes: Pick tomatoes that are firm so they don’t fall apart when you scoop out the insides. Beefsteak tomatoes are a favorite. Make sure they are the same size so ensure even cooking.
  • Scoop: Use a melon baller or a grapefruit spoon to make getting the insides out easier. You want the shell intact as much as possible.
  • Fill and Bake: If you have extra filling bake it in pan with the tomatoes, don’t over fill them. And don’t over cook the tomatoes, they’ll split. Fill the tomatoes but don’t overstuff. Excess filling can be baked in the pan next to the tomatoes if desired.
  • Sausage: You can use a spicy sausage if you like a little more heat. Turkey or Chicken Sausage, ground beef or ground chicken can also be substituted.
  • Cheese: You can mix up the cheese, try a sharp cheddar, Monterey jack,  Gouda, or pepper jack for some kick.
  • Rice: Try using brown rice or quinoa instead of white rice for a heartier meal. Try orzo pasta for different texture and taste.

  • Storage: These scrumptious vitals are best served right out of the oven but they are almost better the next day as the flavors have had time to meld together. Keep leftovers in an airtight container in the fridge for up to 4 days.
  • Reheat:  Microwave until heated through, or place under the broiler or toaster oven for about 5 min.

Ingredients

  • 4 large tomatoes
  • salt and pepper
  • 1/2 pound ground sausage
  • 1 cup white rice cooked
  • 1 1/2 cup Colby Jack cheese shredded and divided
