Hibachi Chicken

Hibachi Chicken is a Japanese favorite with tender chicken breast coated in soy sauce and butter. It’s amazing served with rice and yum yum sauce!

Hibachi Chicken

Natasha here from Salt & Lavender! I have a weakness for sauces, and the combination of the soy sauce & butter sauce on the chicken and the yum yum sauce it’s served with is heavenly. This easy Japanese chicken recipe comes together quickly, and it’s something a little different that you can try for dinner without having to put in too much time/effort!

The key to this recipe is to not overcook the chicken. I highly recommend getting an instant read meat thermometer to ensure the chicken is just done (165F is the safe internal temperature). If the chicken breasts you buy are particularly large, you may want to cook the chicken in two batches so the pan isn’t over-crowded. The chicken should brown (it needs a little space) vs. steam (when it’s all clustered together).

What is Hibachi Chicken?

“Hibachi” refers to the cooking method – it’s a type of grill that’s found in Japanese restaurants (a metal cooking plate where food is cooked over a very high heat). It’s similar to teppanyaki. For the at-home version of this recipe, we simply use a hot skillet. Hibachi chicken is quickly seared and then finished in the butter and soy sauce.

What is Yum Yum Sauce?

Yum yum sauce is found at Japanese steakhouses and commonly served with Hibachi Chicken. It’s quick and easy to make at home with simple ingredients. You can use Japanese mayo or regular mayo if that’s what you’ve got on hand.

Ingredients for Hibachi Chicken:

  • Chicken breasts: cut them up small so they cook quickly. You can use chicken thighs if you prefer, just be sure they’re cooked to 165F.
  • Sesame oil: for searing the chicken, adding flavor, and ensuring the butter doesn’t burn. Be sure to not use toasted sesame oil. You can swap with olive oil if needed.
  • Butter: one of the main flavor components of the sauce.
  • Garlic: for extra flavor.
  • Soy sauce: rich savory flavor (use low sodium or else the sauce may be too salty).
  • Lemon juice: adds adds a bit of brightness/acidity to finish the chicken with.

How to Make Hibachi Chicken Recipe:

  1. Make the Yum Yum Sauce: Add the sauce ingredients to a bowl and stir until combined. Set aside until needed. You can make the sauce up to a few days ahead if needed (store in the fridge).

  2. Prep the Chicken: Cut up the chicken and season it with salt & pepper.

  3. Sear the Chicken: Add the oil and 1 tablespoon of butter to a large skillet over medium-high heat. Let the pan heat up for a few minutes. Cook the chicken for 5 minutes, turning once halfway (I use cooking tongs to make this easy), or until it’s just cooked through. Don’t overcook, and avoid crowding the pan (you want the chicken to get a little brown on the outside).

  4. Finish the Chicken: Add in the rest of the butter, the garlic, and the soy sauce. Let it bubble for about a minute.

  5. Garnish and Serve: Squeeze some lemon juice over top (up to 1/2 a lemon is good). Serve with rice, yum yum sauce, and optional chopped scallions. You could also serve it with a side salad like this Asian Kale Ginger Peanut Salad.

Ingredients

  • 3 chicken breasts (cut into 1" pieces)
  • 2 tablespoons sesame oil or olive oil
  • 2 tablespoons butter (divided)
  • 2 cloves garlic (minced)
  • 3 tablespoons low-sodium soy sauce
  • Lemon juice (to taste)
  • Cooked rice (for serving)
  • Chopped scallions (optional, for garnish)

Yum Yum Sauce:

  • 3/4 cup mayo (use Japanese mayo if possible)
  • 1 heaping tablespoon ketchup
  • 1 teaspoon granulated sugar
  • 1 teaspoon smoked or regular paprika
  • 2 teaspoons rice vinegar
  • 1 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt & pepper (to taste)

Instructions

  • Add the yum yum sauce ingredients to a bowl and stir until well combined. Set aside.
  • Cut up the chicken and season it with salt & pepper.

Notes

  • Feel free to taste the yum yum sauce and adjust ingredient quantities to your liking. If you want to add some heat, add in a dash of hot sauce.
  • If you want to drizzle the yum yum sauce over the dish like I did, you may need to thin it out with a little water. You could serve it in a little bowl for dipping if you prefer.
  • Make your usual amount of rice for 4 people (I suggest making 1 cup uncooked rice, up to 1.5 cups uncooked rice for hungry people).

Kate Moss’ Daughter Stars as One of the Faces of Marc Jacobs’ Latest Scent, Perfect

Marc Jacobs has many tattoos—some fun and whimsical and others that hold a deeper meaning. At least two are also inspo for his work: “Shameless,” tattooed on his chest, is the name of the Marc Jacobs Beauty foundation line (launched in 2018), and “Perfect,” which is inked on the inside of his wrist, is the jumping-off point for his latest fragrance.

But Jacobs’s new scent isn’t about striving for perfection. When he first got the tattoo, it was to serve as a bulwark against negative thoughts and insecurities like “I could be stronger in this way or better at that thing,” he explains in the press release for the fragrance. “I can just say ‘No, I’m exactly how I need to be right now.’ So…perfect.”

The campaign boasts a cast of 42 people selected via social media for a series of portraits celebrating individuality. One of those faces is none other than Lila Moss, the 17-year-old daughter of supermodel Kate Moss, who made an entire career out of what some have called her “imperfect beauty.” The OG Moss has been a muse and BFF to Jacobs for almost three decades, starting with the first show he cast her in—the infamous Perry Ellis Spring 1993 grunge collection—which roundly offended fashion sensibilities and got Jacobs fired but proved to be ahead of its time.

The young Moss’s first modelling gig was in 2018 as the face of Marc Jacobs Beauty. “It felt a bit like an intersection of my personal and professional life coming full circle as we gathered in the studio,” Jacobs wrote on Instagram. When asked about what “perfect” means to her, Lila said: “It’s about having the confidence to be yourself and knowing that you’re perfect as you are. There’s definitely not one thing that makes you perfect; it’s a combination of all of your great qualities.”

Perfumer Domitille Michalon Bertier set out to create a scent that would live up to its name. Described as an addictive floral, the fragrance features the daffodil, which was a deliberate choice. “The idea was to find a flower that is not perfect,” she explains. Unlike the elegant and hardy rose, the springtime bloom is a wildflower that is fragile and cannot be cultivated. When used in perfumery, the scent needs to be quickly extracted before it fades away. Michalon Bertier also used rhubarb—“that is also not an easy smell or taste for people because it’s very acidulous”—to add a crispy top note and paired it with almond milk, cedarwood and cashmeran for a creamy, musky finish.

Jacobs was involved in every aspect of the scent’s development and was determined to perfect the details on the bottle cap, which include a cherry, a star and dice—all recurring motifs in his designs. The end of the project happened to coincide with the designer’s wedding. Last April, Jacobs tied the knot with his longtime partner, Char Defrancesco, in New York City. It’s only fitting that Kate Moss and her daughter were in attendance to celebrate another major milestone in his life.

Moroccan roasted cauliflower with grilled fish

Spices! They can transform a simple bland dish into an aroma and flavour filled meal that you’ll be wanting to add to your regular repertoire. This Moroccan roasted cauliflower with grilled fish dish by Bridget Davis is one that is on repeat at our house. It’s quick and easy and utilises some of the best favourite combinations. You can do this dish with either Ras el hanout (mix of cinnamon, coriander seeds, black pepper, ground ginger), or a Moroccan spice blend (cumin, Himalayan salt, pepper, cinnamon, all spice, coriander, chilli, cloves, nutmeg and turmeric), which lend such a wonderfully uplifting hand to the cauliflower. Don’t be overwhelmed by the spice blends, you can buy these premixed at the supermarket if you prefer. If you enjoy making from scratch or have the ingredients to make from scratch, Bridget has some excellent spice blend recipes in her book too.

Moroccan roasted cauliflower with grilled fish

Ingredients
  • 140 g (5 oz) raw cauliflower florets
  • Himalayan salt and freshly ground black pepper
  • 2 teaspoons Moroccan spice blend (page 42)
  • 1 tablespoon ground wakame (page 40)
  • 1 teaspoon finely chopped flat-leaf (Italian) parsley
  • 125 g (4 ½ oz) piece of white fish fillet
  • ½ lime, zested and juiced
  • 1 small handful mint, coriander (cilantro) or basil leaves
  • 1 lime wedge, to serve
Instructions
  1. Preheat the oven to 200°C (400°F) and line a small roasting tray with baking paper.
  2. Place the cauliflower florets in a small pot and just cover with water. Add a pinch of salt and bring the pot to the boil. Allow the cauliflower to cook for 5 minutes, then drain the cauliflower.
  3. Pat the cauliflower dry with a paper towel, then sprinkle with the Moroccan spice blend, half the ground wakame and the finely chopped parsley. Season with a little salt and pepper and lay the cauliflower in a single layer on the roasting tray, leaving space for the fish.
  4. Pat the fish fillet dry with a paper towel, drizzle with the lime juice and sprinkle over the zest. Top with the rest of the ground wakame and season with salt and pepper.
  5. Place the fish onto the roasting tray alongside the cauliflower and cook in the oven for 8–10 minutes, or until the cauliflower is tender and the fish is just cooked through. The fish should flake easily when gently touched with a fork.
  6. Serve the cauliflower and fish topped with fresh herbs and a lime wedge on the side.

Ingredients in Macaroni and Cheese Cups:

Pantry staple ingredients come together easily to make this effortless side dish.  The mixture of cheddar and mozzarella cheese melts together perfectly and fills each bite with irresistible flavor and texture.  Just one will not be enough!

  • Elbow macaroni: Uncooked elbow macaroni is perfect for these cups.
  • Butter: Use either salted or unsalted. Just adjust the additional salt accordingly.
  • Egg: Beaten egg holds each cup together.
  • Shredded sharp Cheddar cheese: Half goes into the pasta mixture and half is sprinkled on top of each cup.
  • Shredded mozzarella cheese: Soft, moist cheese that is creamy with milky flavor.
  • Milk: Makes the cheese sauce creamy.
  • Seasoned dry bread crumbs: Adds crunch as it bakes with the oil.
  • Olive oil: Moistens the bread crumbs and gives the topping a light, crispy texture.
  • Salt: To taste!

How to Make Baked Macaroni Cups:

This Mac and Cheese Cups recipe is just as easy as the homemade baked mac and cheese we have all made for years.  Simply add the pasta mixture to a greased muffin tin, sprinkle with cheese and the most amazing bread crumb topping, then let it bake to perfection.

  1. Prep: Preheat the oven to 350 degrees. Then, grease a muffin tin with nonstick cooking spray.  Next, bring a large pot of water to a boil.
  2. Cook Pasta: Now, add the macaroni to the boiling water, and cook for 8 minutes until al dente. Drain and return to the pan.
  3. Mix together past and sauce: Stir in the butter and egg until the pasta is evenly coated. Before mixing, reserve 1/2 cup sharp cheddar cheese.  Then stir the remaining cheddar cheese, mozzarella cheese and milk into the pasta. Carefully spoon even amounts into the muffin tin. Sprinkle the reserved cheese on top.
  4. Prepare topping: In a small bowl combine the bread crumbs, olive oil, and salt, then sprinkle the mixture on top.
  5. Bake: Place in preheated oven for 30 minutes or until it is golden brown. Lastly, remove from oven and let cool for 5 minutes.

Variations of Muffin Cups:

The best part about these mac and cheese cups is how versatile they are. Try this Ranch Bacon Mac and Cheese Cups for another favorite variation. These cheese cups are easy to adapt which creates unique treats that are custom to your family!

  • Mix ins: Add healthy veggies like broccoli or even some proteins like chicken, crumbled bacon, or ham to make these a tiny version of a complete meal.
  • Mini Muffins: Use a mini muffin pan to make bite size gems that are both savory and impressive.  Serve them as an appetizer or snack.
  • Easy removal:  Use cupcake liners for an even easier removal option.  For best results, let them cool for about 10 minutes before removing them from the muffin tin.

Storing Cheese Cups:

Macaroni and cheese cups are great to make ahead because they are so quick easy to reheat for a quick side or a warm lunch.  If you plan to use them within a week, wrap tightly and refrigerate for up to 5 days.  Or freeze to use again within 2 months.  When you are ready to use them, simply microwave and use immediately, or thaw in the refrigerator and use within 3 days.

Running Through It: Adoption Day and Beyond

"This picture cracks me up," says Tish, "We're both like, OMG, what just happened?" (And note: her Rock 'n' Roll Marathon shirt...)

When you fly nearly 8,000 miles to adopt a baby, you’re given a laundry list of items to pack: diapers, wipes, onesies, tiny socks, blanket, formula (milk-based and soy—who know if she’s allergic?), bibs, bottles, medicine, toys, snacks. And that’s just for the baby! Oh, and on international flights, your overloaded suitcase can’t weigh more than 50 pounds. When the suitcase got to 48 pounds, I added running shorts, shirt, bra.

When we landed in Guangzhou 15 years ago at nearly 11:00 at night, it was 92 degrees and so humid you could see droplets hanging in the air.

We collapsed in our hotel bed but jolted awake a few hours later because jet-lag and you know adopting a baby that very same day!

Then-husband was lacing up his sneakers. “Where are you going?” I asked. “The gym isn’t open yet.”

Said he: “I’m going for a run.”

At 4:30 in the morning? In Guangzhou? Outside?

My perfectly reasonable response: “I’m coming with you.”

Every year around this time, I am reminded of those literally life-changing days. Maybe more so this year because the coronavirus crisis is upending all our lives.

All along the East Coast where I live, the heat and humidity rivals that of China. (Okay, not quite, but that’s a competition I am happy to concede.) Oh, and there’s that child in my life!

I can’t begin to describe how nerve-wracking it is to be handed an 11-month-old baby who’s screaming because you look, sound, smell, feel different than anything she’s ever experienced in her little life. Wah!

Every route to motherhood is filled with its own unique blessings and challenges. As an adoptive parent, I didn’t have post-partum physical concerns; I also didn’t have an infant but an 11-month-old who was fully cognizant that her world had taken a startling turn she wasn’t sure she approved of. Wah!

Therapist-speak would say running is my coping mechanism. She napped; I ran. Some might say that was selfish, I should’ve spent the time with her. I’ll say no mother should ever feel guilty about taking a half-hour to reset her sanity—especially with such a healthy mechanism as running!

All the best moms celebrate "Family Day," anniversary of adoption, with ice cream at the Jersey Shore. Fifteen years! Sniff!

Come to think of it, it’s a pattern that continues today, as she nears her Sweet 16th birthday. She sleeps in, I run. Blessed are the teens who sleep until nearly noon on weekends.

Don’t you know, I ended up running nearly every single day of that trip in China?

Megan Thee Stallion is Named as The New Face of Revlon

Revlon has announced its newest Global Brand Ambassador today – and it’s none other than music superstar Megan Thee Stallion.

Known for her hits Hot Girl Summer and TikTok anthem Savage, Megan has since collaborated with Beyoncé and is gearing up to launch a collaboration with Cardi B this week. And in addition to being one of hip hop’s most sought-after talents (as well as a TV presenter and student – she’s currently studying for a bachelor’s degree in Health Administration from Texas Southern University), Megan’s new Revlon role sees her joins the likes of Gal Gadot, Ashley Graham and Adwoa Aboah in the global ambassador ranks.

Speaking of her appointment, Megan said in a release, “I’ve alway set the bar high for myself with everything I do, but to now be a brand ambassador for Revlon, it feels like a new level. To me, the Revlon brand stands for both beauty and female strength and I’m excited to help define what that means to a new generation of women.” The singer also did her own makeup for the campaign shoot.

Silvia Galfo, the global brand president of Revlon described Megan as “a remarkable talent,” adding that the brand was “drawn to  her confidence and fierce ambition as much as her power to hold nothing back.” She continued, “[Megan] loves to express herself with makeup and is a constant inspiration to her fans on living boldly. It’s that authenticity and unapologetic spirit that we admire, and we are thrilled to welcome her to the Revlon family.”

This isn’t the first time Megan has starred in an ad campaign, having previously fronted ads for Coach and Savage x Fenty – and we suspect it certainly won’t be her last, either.

Head to Trader Joe's For Frooze Balls! They're the Best Store-Bought Protein Balls I've Tasted!

I'm always on the lookout for new plant-based, healthy products when shopping at Trader Joe's, and lucky for me, I usually find at least one! The other day while looking at the protein and granola bar section, I found these Frooze Balls, plant-based fruit and nut protein balls. They're not a Trader Joe's product, but on the Frooze Balls website, it says they're available exclusively at Trader Joe's (ooh fancy!). The list of ingredients was clean and the flavours looked delicious, so I picked up two packages. Canadian Fashion Brands NONIE and SOPHIEGRACE Team Up on Face Masks in Support of Domestic Abuse Victims

Two Canadian womenswear brands – NONIE and SOPHIEGRACE – have teamed up on a new collection of face masks with an incredibly important message. As the COVID-19 pandemic continues, domestic violence rates continue to rise across the country so designers Emma May and Nina Kharey have designed the ‘M(ask) Me’ collection to offer discreet support for abuse victims during this time.

“COVID-19 has had a significant impact on women across this country, and as stresses mount for so many, those facing violence at home are even more trapped,” May said in a release. “I am proud to collaborate with [Kharey] to provide our communities with high quality, Canadian-made, reusable masks while raising money for organizations that help victims of domestic violence and create programs to change patterns that lead to the destruction of too many families.” Kharey adds, “The initiative with Emma is a way for us to help those in need, those who may not know where to go for help and those whose lives may be in danger, by making a simple identifying mask as a symbol of hope and support.”

Each of the masks features a ‘M(ask) Me’ logo on the side, which indicates that the person wearing the mask can provide information about local resources and help in reaching out to them. Plus, $10 from the sale of every mask will be donated to various organizations providing support to victims at this time, including the YWCA Calgary.

Speaking of the initiative, Jan Damery, the vice president of external relations and engagement at YWCA Calgary, said, “The pandemic has created new challenges and restrictions in all our lives. Many women experiencing abuse now see their options as even more limited than before. Creating opportunities to talk about abuse helps remove the secrecy in which it thrives.”

The masks are now available for purchase on SophieGrace.ca and HouseofNonie.com for $30 each. They are made with 100 per cotton, have an internal filter sleeve and come in a medium size which fits most. For more information on the initiative, click here.

Meghan Markle’s Wedding Nail Polish Colour Has Finally Been Revealed

The royal wedding of Meghan Markle and Prince Harry feels like a lifetime ago – particularly now that the pair have relocated to the US after stepping down as senior royals two years after the big day – but one big beauty question has remained since that day which we’d never had a clear answer on: What nail polish colour was Meghan wearing? Many speculated it was Essie’s Ballet Slippers (the colour favoured by The Queen), which seemed like a pretty good guess, but it turns out it was a custom shade.

In a new report by British Vogue, the site revealed that Meghan visited London’s DryBar ahead of her big day for her CND shellac manicure and that the end result was a mix of two shades. The Duchess opted for one coat of Unmasked (a baby pink hue) as the base layer, followed by two coats of Negligee (a very sheer, pale white-pink) on top. For her pedicure, she chose Cashmere Wrap (a soft neutral).

Markle played by the rules for her wedding day mani by opting for a light, neutral colour. On previous occasions, she broke the unofficial palace nail protocol by wearing darker hues on her fingers. But let’s face it, she wears both very well.

Whether you opt to replicate the look during your next at-home manicure, or visit to a salon as the country slowly begins to reopen, we think this is the perfect wear-with-everything hue for summer – and we suspect we’ll be seeing it everywhere now that the news is finally out.

Everything You Need to Know About Selena Gomez’s Beauty Line, Rare Beauty – Including Its Launch Date

Update: If you’ve been glued to your phones waiting for news of an official release date for Selena Gomez’s Rare Beauty line, then you’re in luck because the multi-hyphenate has finally announced when the collection will be dropping. In a post shared to Instagram, Gomez wrote, “I’m SO excited to finally share that Rare Beauty will be launching September 3rd only at Sephora US, Sephora Canada, Sephora Mexico and RareBeauty.com.” She added, “I’ve had so much creating everything and can’t wait for y’all to try it all! I hope you love it as much as I do.”

The news comes a few weeks after the announcement that Gomez is launching the Rare Impact Fund, a mental health focused initiative, as part of Rare Beauty. The goal is to raise $100 million over the next 10 years, and one per cent of annual Rare Beauty sales will contribute to this amount.

Update (14/04/20): More details have come to light about Selena Gomez’s upcoming beauty line, Rare Beauty. Scheduled to launch in Sephora this summer, the line will launch with a whopping 48 shades of foundation and concealer. In a new piece for Interview magazine for which she was interviewed by friend Amy Schumer, Gomez said of the products, “It’s all very clean and easy. I wanted people to feel safe.”

She added, “I wanted to start a conversation about how you can make yourself feel great. It’s not necessarily about needing these things to make yourself feel beautiful. People of my generation have all this pressure to look a certain way, and I wanted to make a line that took away a bit of that pressure.”

Schumer then asked if the Lose You to Love Me singer could “make a mascara that doesn’t clump” to which Gomez replied, “Yes, I’ll be sure to.”

Original (05/02/20): Last year, rumours began to circulate that Selena Gomez was gearing up to launch her own beauty line after she filed trademark paperwork. Now, the pop star has confirmed they were indeed true, launching the Instagram page for her new line, called Rare Beauty, this week.

The page currently only has three posts introducing the range, however it’s message of self-acceptance and inclusivity is abundantly clear. One caption reads, “Our mission is to shape conversations around beauty, self-acceptance, and mental health. We want to help more people get access to support and services, and help people feel more authentically connected to one another and less alone in the world.”

In a video, Gomez talks about the purpose of the new line, saying, “Being rare is about being comfortable in yourself. I’ve stopped trying to be perfect. I just want to be me. I think Rare Beauty can be more than a beauty brand. I want us all to stop comparing ourselves to each other and start embrace our uniqueness. You’re not defined by a photo, a like or a comment. Rare Beauty isn’t about how other people see you, but how you see yourself.”

The singer has always been very open about her mental health. In a January interview with WSJ Magazine, Gomez said, “I had low self-esteem, and that’s something I work on continuously. But I feel so empowered because I’ve gained so much knowledge about what was going on mentally. My highs were really high, and my lows would take me out for weeks at a time. I found out I do suffer from mental health issues. And, honestly, that was such a relief. I realized that there was a way to get help and to find people that you trust. I got on the right medication, and my life has been completely changed.”

In the one minute long clip, Gomez can be seen sampling products including eyeshadow, lip colours and complexion. At one point, Gomez says, “I’m so nervous!”
