Old Fashioned Apple Cobbler

Apple cobbler is a classic dessert that families have been enjoying together for years.  However, it is in no way out of style.  This cobbler is timeless and will continue to be a tried and true hit for a long time to come.  The flavors are perfectly balanced with the sweet and tart flavors of the apples and the warm cinnamon.  Then the soft and flaky crust on top creates a pie like texture that melts in your mouth.

Not only does this old fashioned apple cobbler taste amazing, but it is versatile and easy to make. The recipe is quick and easy to follow and is impossible to mess up.  Everyone will be amazed at how soft and sweet this cobbler is.  Pair it with a large scoop of vanilla ice cream and this dessert will be the star of the meal!

Ingredients Apple Cobbler:

Don’t be scared off by this long list of ingredients.  Many of the items are seasonings and basics you already have in your pantry.  The classic apple cobbler flavors are created quickly with these simple and easy to use items.

Filling:

  • Granny Smith apples: Peel and sliced before adding them to the bottom of the dish.
  • Brown sugar: Measure brown sugar when packed down.
  • Apple juice: Gets poured over the apples to make the most delicious sauce as it cooks.
  • Cinnamon: Warm spice that creates the classic apple/cinnamon flavor.
  • Lemon Juice: The acid helps soften the apples and gives a hint of citrus.
  • Cornstarch: Thickens the apple sauce that gets poured over the apples.

Biscuit Topping:

  • Flour: Thickening agent.
  • Sugar: Adds sweetness to the crust.
  • Baking powder: Creates a light, biscuit like texture.
  • Cold butter: Sliced
  • Milk: Keeps the dough moist.

Topping:

  • Sugar: Even more sweetness!
  • Cinnamon: Warm spice found in the topping and the filling for consistent flavor throughout.

How to Make Apple Cobbler from Scratch:

A perfect apple cobbler is much easier that you would think.  It is really a no fail recipe that even a beginning baker will be successful making every time!

  1. Prep: Preheat oven to 350 degrees and lightly grease a 9×13 inch pan.  Then, add sliced apples to the bottom.
  2. Cook apple sauce: In a medium sized saucepan add the brown sugar, apple juice, cinnamon, lemon juice and cornstarch. Now, bring the mixture to a boil and reduce heat.  Let that simmer until it starts to thicken for about 2 minutes. Once it is finished, pour it over the apples and toss.
  3. To make the biscuit topping: In a food processor add the flour, sugar, baking powder and butter. Pulse until the butter has incorporated. Add to a medium sized bowl. Add the milk and combine. Drop on top of the apple mixture.
  4. Add topping: Combine sugar and cinnamon then sprinkle on top of the biscuits.
  5. Bake: Cook for 35-40 minutes or until the top is golden brown and toothpick comes clean.

What’s the Difference Between Pie and Cobbler?

The main difference between a pie and a cobbler has to do with the crusts.   A pie has a top and bottom crust where a cobbler has only a top crust.  The fruit is placed directly on the bottom of the dish in a cobbler.  Additionally, the crust of a cobbler is more like a biscuit consistency instead of the pastry dough you will find in a pie.  Cobblers can also be prepared in any dish, where a pie is presented in a pie pan.

Tips for the BEST Apple Cobbler:

A flaky crust drizzled with cinnamon sugar is perfect for entertaining.  Everyone will devour it quickly and talk about it for much longer.  Keep these couple of tips in mind as you prepare to wow your friends and family.

  • Apples: There is no need to pre-cook the apples because they will cook during the bake time.  The peel does need to be removed because it will not break down during cooking.
  • Butter: Use real butter for this recipe.  Swaps are not going to give you the same delicious buttery crust and flaky texture.

Can you Make Homemade Cobbler Ahead?

Yes! You can prepare this amazing dessert up to 2 days before you plan to bake it.  Loosely cover your cobbler to store it in the refrigerator.  However, to freeze it you will need to tightly cover it and bake it within 5 months.  For best results, poke a few holes in the top of the apple cobbler if baking it from frozen.

Store the apple pie for two days at room temperature. So, if you know you will not eat it right away, loosely cover and keep it in the refrigerator instead where it will stay good for up to 5 days.  To freeze, you will want to wrap it tightly and enjoy it within 3 months.

Ingredients

Damage Control

My friends and I joked, when this all started (this = COVID/Schools closing, etc.) that each morning we feel like the captain of a ship, waking with bloodshot eyes, sitting at the helm of the command bridge (for some reason my vessel is a spaceship, aka Captain Kirk) and taking a long, slow drag from a coffee cup before letting out a sigh, and asking deliberately and without emotion “damage control.”
In my case this is my Amazon device, whom I ask each morning to tell me the weather and top news for the day. I sip my coffee as my 5 year old runs in circles around me wearing his Captain America or Batman cape, a ball of energy as soon as he wakes, oblivious to his little boy giggles and little feet padding on the hardwood floor. I’m too busy trying to take it all in, plan my day, make my lists, and worry about the future.
A few weeks ago, things changed. I stopped asking dear Alexa, as we call her, for the top news. I stopped asking about the weather, and instead looking out the window. At first, this was a way to deflect from the bad news that just wouldn’t stop coming. But now, it’s because I don’t want to know. I want to greet my kids, plant a kiss on my daughter’s moppy head full of bedtime hair gone wild, take in the scent of her fruity pebbles, the only breakfast she’ll eat as of late, and try to catch the whirling devil that is my preschooler on his 3rd pass around the kitchen island and squeeze his wiggling and giggling body into a big mommy hug.
I’ve finally accepted that we need to slow down. And that I don’t need to know all the top news of the day immediately upon waking. In short, not knowing what tomorrow will bring has made me stop trying to know everything. There might be a new planet to explore on the horizon, or there might be a meteor shower. These are all unknowns. But what I do know is my son will be up and running as soon as the sun rises, my daughter will be sitting at her stool at the counter with tangled hair in her little nightgown, and my older son will be sleeping soundly and need a gentle reminder that he can’t sleep until noon. Or perhaps I will let him sleep, and enjoy my coffee on the front porch.

This CBD colada is smooth, creamy, and delicious. It's also easy to make with just fresh-cut pineapple, pineapple juice, coconut, fresh-squeezed lime juice, and hemp-derived CBD. Ingredients

  1. 1 cup fresh organic pineapple, skin removed and cut into cubes
    2 ounces pineapple juice
    1 ounce unsweetened coconut milk
    2 tablespoons cream of coconut (Coco Lopez recommended)
    1 teaspoon fresh-squeezed lime juice
    1 dropper full (or your preferred dose) unflavored full-spectrum hemp CBD oil tincture
    1 cup ice
    Garnish with a pineapple leaf, slice of pineapple, and a pink flower and/or fresh-cut hemp leaf

Directions

How Canadian Programmer Brie Code is Changing the Way We Interact With Our Phones

In 2015, Canadian programmer and CEO of TRU LUV Brie Code noticed a gap in the games market. After having spent almost eight years at Ubisoft as an AI programmer, Code – and yes, that is her real surname – began to wonder why so many of her friends and people she knew didn’t like video games. “I tested different games on my friends and I pitched different game ideas to different friends and saw a very clear pattern that my friends seemed to want things that centered more on care and connection rather than domination or violence,” Code tells FASHION. This prompted research into the psychology behind game design, as well as flow states “which are when you get really into something and lose track of time,” Code explains. “That’s what game designers design for.”

During her research, Code discovered that there are two key responses to stress in humans. The first is ‘fight or flight’ which is the most commonly known response whereby adrenaline is released in your body fueling your desire to win. Game designers, explains Code, deliberately create “a sense of danger, or challenge or pressure or shock and this triggers that response of wanting to win and they give your opportunities to win and that creates engagement.” The second is “a little known but very prevalent” stress response called ‘tend and befriend.’ Code explains, “If you experience this instead of adrenaline, it’s oxytocin which is the love hormone and it instead drives behaviours of care and connection, looking at who is more vulnerable than you and protecting them, seeking out your allies or your friends and talking with them about the problem and finding solutions that work for everyone instead of trying to win.”

Code says that around 50 per cent of humans react to stress via the ‘tend and befriend’ response, with “the general tendency that this would be the response of more feminine people.” We suggest that it seems odd, then, that the games industry doesn’t provide experiences that speak to this response. “That’s because of the lack of diversity,” says Code, who tells us that only about three per cent of game programmers are women and that in the first five years of her career she was the only woman on any development team she was part of. This is something that she has actively sought to change – beginning with her AI company, TRU LUV. Based in Toronto, TRU LUV centres marginalized voices in the design process. By doing this, Code – who was the first Canadian to attend the 2020 Apple Entrepreneur Camp (a female-focused startup accelerator where women can “feel seen for who you are instead of just being seen as a stereotype”) – says it allows them to further solve how to bridge the gap in the games market, as well as “continue to innovate and solve very interesting and necessary things in the industry.”

#SelfCare is the first product from TRU LUV that speaks to those with the ‘tend and befriend’ response. The app was designed with Code’s colleague Eve Thomas and included “mini games that instead of going from easy to hard, like games do, went from awkward to smooth, or empty to full or disconnected to connected so they actually get easier as you play them but you have this sense of being more and more connected to it.” Ahead of the app’s launch, Code says they “got a lot of people telling us that were wrong, and that this couldn’t possibly be right.” As such, Code says she hoped that they’d get “a few thousand” downloads and could then work with those users to “get to the bottom of this [issue].” When it launched in 2018, it had 500,000 downloads in the first six weeks with zero advertising.

“For those first few days, I couldn’t get off the couch because I didn’t know how to process this,” shares Code of her response to the overwhelming success of the app. Once she began to read through all of the emails and comments – “what people were saying was exactly what I would want to hear if we were right” – she toyed with the idea of scaling the product out immediately. However her team persuaded to think otherwise. “[They said] no, we’re on to something. Let’s build the whole model for a new form of human computer interaction. So that’s what we’re doing.”

This new model is what Code refers to as “Companion AI” and they’re only just getting started. Recently, the company has secured funding from a group of global investors and is building a model that helps to “build your natural resilience and compassion [as you interact with it] so that our interface with technology and the internet can be something that can be nourishing for us as people.” Code understands that for many of us our relationship with our phones is best described as tumultuous and so she and her team are actively looking at ways to reframe the relationship in a way that is healthy for us as humans. “We’re never going to go backwards but how we go forward in ways that empower and enable everyone?”

As a result of the COVID-19 pandemic, Code says downloads of #SelfCare have doubled – and her team is already looking ahead to how they can help people next. “We all had to go through this shocking change of going into isolation and all of the change that will continue to happen, these are all potential traumatic episodes for people so technology that helps with the processing of trauma and even helps potentially create the conditions for post-traumatic growth is something that we’re thinking a lot about right now,” she shares.

As for her hopes for the future of Companion AI, Code says the eventual goal is “opening up social interfaces where people can create community mediated by technology, potentially across distances, that feels nourishing and good and where people can help each other.” In a world that is technology-fatigued, this can’t come soon enough.

Do you Really Need to Detox?

We’re always hearing about how we need to detox if we’ve had a big weekend of indulging, before or after holidays, or after having a few too many drinks. But is this a myth, or is there truth behind the idea of ‘detoxes’?

Detoxes can range from juice cleanses, to days of fasting. Most commonly, it involves a period of fasting, followed by a strict diet consisting only of fruit, vegetables, juices and water in an attempt to “cleanse” your body.

So do they work?

Short answer: no.

You don’t need to “detox” your body to recover from overeating, drinking too much, or whatever reason people have invented to sell these diets. Your body gets rid of toxins on its own. In fact, your liver, kidneys, skin and lungs are literally built largely to detoxify your body!

People claim these detoxes are good for weight loss, health and resetting your body. However, the weight you lose during these detoxes is normally just water weight. This isn’t healthy to lose – it means you’re dehydrated! You often regain this weight as soon as the detox is over.

It’s also very unhealthy to restrict your body of essential macronutrients like protein, fibre and fats. So again there is no argument for detoxes being healthy!

It can be so bad for your gut, disrupting your microbiome and potentially damaging your metabolism. Often a detox can leave you feeling tired, sluggish and exhausted, because you’re not getting the nutrients you need!

Overall, I believe detoxes encourage a negative relationship with food. They encourage you to restrict so many foods from your diet for no real health benefits.

Vestiaire Collective Predicts Vintage Clothing Will be a Big Part of Fashion’s Future

This weekend, Princess Beatrice married Edoardo Mapelli Mozzi in a private ceremony at The Royal Chapel of All Saints in Windsor. And whilst the flowers were breathtaking and the seemingly relaxed feel of the private event gave an air of wistful romanticism, it was Beatrice’s dress that had everyone talking. The royal opted for a vintage piece from Norman Hartwell which was loaned to her by the Queen. A stunningly sustainable choice, it appears Beatrice has her finger on the pulse when it comes to fashion’s future. According to a new report by Vestiaire Collective, the popularity of vintage fashion is on the rise.

In its newest report, The Smart Side of Fashion, the online fashion reseller looked at its data and outlined three big trends it predicts will lead the way in coming seasons: vintage, sustainable and resourceful. When it comes to vintage, the report pointed to shifting consumer attitudes towards shopping as a result of the COVID-19 pandemic. “As the supply of new items continues to be affected by access – including delayed manufacturing, blocked supply chains, closed stores and reduced desire for IRL shopping – our community are increasingly looking to vintage pieces to slake their shopping thirst. They also have more time research overall purchases, and because they’re buying fewer items, they’re investing more time in each one,” it writes.

As for the brands people are seeking out, John Galliano’s RTW has seen a 49 per cent increase year-on-year, whilst Nicolas Ghesquiére-era Balenciaga is up 186 per cent. Margiela, Prada and Miu Miu are other heavy-hitters in the category.

Interest in sustainability-focused brands is also on the rise according to the report with Vivienne Westwood, Stella McCartney and Rejina Pyo all selling quickly, whilst heritage brands like Rolex, Omega and Hermès are leading the charge in the resourceful shopping category.

Interestingly, the report also noted that the percentage of male buyers and sellers was increasing at a faster rate than women. Plus, the new generation of male shoppers is forging its own path when it comes to fashion.  “Younger guys are also more confident about challenging gender norms through fashion and are increasingly buying clothing and especially accessories from womenswear sections and brands.” This follows similar data from Lyst’s most recent report which reported that the site had seen a 150 per cent increase in male shoppers this year.

The Nominees for the 2020 CFDA Awards Are Revealed

The Council of Fashion Designers of America (more commonly known as the CFDA) has today revealed the nominees for the 2020 CFDA Fashion Awards. For the first time, this year’s awards won’t have any honoree awards, however two new international awards have been introduced.

The awards were scheduled to be held on June 8, however due to the COVID-19 pandemic, the event was postponed indefinitely. Now, the CFDA has confirmed the event will go ahead virtually on September 14 instead – marking the official start of New York Fashion Week. Speaking of the shift, Steven Kolb, president and CEO of the organization, said, “In lieu of the in-person event, we will be prioritizing new and existing programming to support our designer community during the global pandemic – by redirecting efforts toward next generation scholarships and making important changes to bring racial equity to the fashion industry. The annual gala serves as our largest fundraiser and our hope is to continue raising money to support this work through industry contributions.”

Social Media Is a Minefield For Those Struggling With Body Image, but I Won't Let It Shake Me

I don't get out of bed every morning feeling particularly positive or confident with the way my body looks. Rather, it's something I have to work toward every day. And when I do have blips of body acceptance, there's no guarantee that I'll feel the same way tomorrow, or even in a few hours. Body confidence is tricky like that. One moment it's here, in another it's gone. I could be scrutinizing over every inch - scratch that, centimeter - of my body, yet the next day be checking myself out in the mirror, flabbergasted that I ever thought my body wasn't beautiful or sexy enough. The thing about body confidence is, just because you have it, it doesn't mean all the negative thoughts vanish into thin air.

Social media is a breeding ground for insecurities, and if you're working on building your body confidence, this is the easiest place to wreck it. Wish your butt filled out your shorts more or you had tinier boobs to pull off a stringy swimsuit? Here's thousands of people at your disposal that don't look like you and can do those things. The amount of jealousy and envy that social media can amount on someone is monstrous. I've caught myself too many times thinking, "Wow, I would look so cute in that if only I weighed less or didn't wear a size in the double digits."

We're constantly editing or tuning our bodies to fit this mold of what society is telling us the "perfect" woman should look like, and I'm guilty of it as well. Photos go through rounds of editing before even making it on Instagram, and I'm left wondering how we as a society got to to this point. It's uncommon to have in-person interactions with a majority of our followers on social media, and the ones we do already know what our bodies look like! So, why are we wasting time worrying about what other people think of our bodies?

As I'm growing and learning to love my body, I've continued to tweak the type of content I'm consuming on my social media accounts. I'm breaking up with immediately feeling self-conscious or insecure about my size as soon as I open Instagram. If I'm putting in the work to appreciate my full figure and curves, I should be aligning myself with social media accounts that do the same. By following people who don't look like me, I'm only doing myself a disservice.

I make a mindful effort now to only follow and support brands and retailers who elicit body positivity and inclusivity. Believe it or not, I want to be tempted over and over again to spend my paycheck on swimsuits or formfitting jeans, and it's hard to be influenced or excited about a product that only exemplifies one body type. Curvy influencers have become my most trusted resource when it comes to shopping, because if they look like me and it fits their body, it'll fit mine. Seeing a real person using their platform to advocate for curvy products goes a lot further than a sponsored advertisement promoting all sizes with a model that looks nothing like me.

Body positivity and body confidence is something I have to work at daily, but reevaluating who and what I give my attention to on social media has made all the difference.

10 Minute Body Weight Workout (full body)

Time poor? Working too much? Holidays? Kids? No excuses! Prioritise or it is not going to happen. You don’t need a big chunk of time. If you only have short amounts of time – make the most of it! I’ve made a ten minute body weight workout that you can definitely squeeze into your day at least once (but preferably three times to hit the recommended 30 minutes of exercise per day). This workout is equipment free, and doesn’t take up much space at all so you can do it anywhere.

Break your 30 minutes of exercise into 10 minute blocks

I know that finding a full 30 minutes to exercise in the day can be tricky. It can also feel intimidating. Breaking your workout into ten minute slots can feel so much more achievable! And, the good news – it’s just as effective.

When my days are too busy to get to the gym or hubby’s working and can’t help with the kids, I try and fit this workout in at home at three different points in my day. The first time is when I put Aria down for her morning nap, before I get on with the chores, then quickly before lunch and before I begin the dinner prep. Doing the workout at 5pm refocusses me helps me not to snack so much in that dreaded pre-dinner time!

So, without further chat, here it is!

10-minute body weight workout

Warm up

Start with a quick warm up, just to get your body ready for action. I do a light jog on the spot for about a minute and give my arms some dynamic stretching by doing some arm circles. If that’s not your style try this:

The full body 10 minute body weight workout

Complete 30 seconds each exercise noted below, then repeat all four times:

  1. Jump lunge this is a plyometric lunge, change legs and land in a lunge with your knee over your ankle and not point in to maximise glute work (or for a lower impact option make this a walking lunge);
  2. Jumping Burpee push up (for a low impact option, omit the jump and take it slower and more controlled, you can even do the push up part on your knees or omit the push up);
  3. Walking plank – move one hand at a time from a high plank on your hands to a low plank on your elbows, trying to keep your hips from swaying side to side as you alternate.
  4. Hollow hold – Actively press your lower back into the floor and draw your belly button into your spine. Inhale to slowly lift your shoulders, arms, and legs off the floor. Keep your hands and heels as low to the ground as possible, while still pressing your lower back into the floor. Maintain tight abs and glutes. It’s OK to bend your knees if straight legs are too challenging)
  5. Ankle taps – crunch and tap your left hand to your left ankle, then alternate sides (this works your obliques – extend your legs to 45 degrees if this is too easy)

Stretch

Don’t forget to finish with a stretch! So important not just for recovery and avoiding injury but also for increasing flexibility and improving your joint health.

Eggplant Lasagna

Hi everyone! Natasha here from Salt & Lavender bringing you this eggplant lasagna recipe. It feeds at least 6 people, and it’s tasty! The leftovers are fantastic. It has plenty of sauce, and it’s a little messy to eat, but that’s the best part really. My husband didn’t even realize it had zero noodles until I told him, and he loves his carbs. He claimed the leftovers for himself.

So, this low carb eggplant lasagna is a fun change whether you’re on a low-carb/keto diet or just want to try something a little different.

Eggplant Lasagna Ingredients:

  • Eggplants: I used two medium ones for this recipe
  • Olive oil: to brush the eggplant slices with
  • Lean ground beef: leaner cuts mean less fat to drain. Feel free to sub with sausage meat or ground turkey/chicken!
  • Marinara sauce: use your favorite jarred kind or homemade
  • Egg: to bind the cheese layer
  • Ricotta, parmesan, and mozzarella: this cheesy blend makes up the cheese layer!
  • Italian seasoning and garlic powder: more flavor for the cheese layer

How to Make Homemade Eggplant Lasagna:

  1. Prep: Preheat the oven to 375F. Slice the eggplant into 1/2″ slices lengthwise. Place the slices on a large baking sheet and generously season both sides with salt. Let them sit for 20 minutes (the bitter juices will release for better taste and a less watery lasagna).
  2. Get the marinara going: Meanwhile, start prepping the other ingredients. Add the beef to a skillet over medium-high heat and cook until browned (about 8 minutes). Stir in the marinara sauce and heat through.
  3. Make the cheese mixture: Add the egg (beat it before adding other ingredients), ricotta, 1 cup of the parmesan, 1.5 cups of the mozzarella (we are saving some mozzarella and parmesan to top the lasagna with), the Italian seasoning, garlic powder, and some salt & pepper to a bowl and combine until smooth.
  4. Roast the eggplant: Once the eggplant is done sweating, pat it dry with paper towels. Brush each piece with olive oil on both sides. Roast for 20 minutes. This helps ensure the eggplant will be nice and tender.
  5. Assembly time! Add a layer of the marinara sauce/beef to the bottom of a greased 9×13 baking dish, followed by a layer of eggplant (it’s ok if it overlaps a little). Then, add the ricotta cheese layer, more eggplant, another ricotta layer, a marinara layer, and then the rest of the parmesan and mozzarella cheeses sprinkled over top. Lower the oven heat to 350F and bake uncovered for 30 minutes. Finish it off by broiling for 5 minutes or until the cheese is nicely browned.
  6. Almost there… Let the lasagna sit for 10 minutes prior to serving. This will help it set.

Tips on Layering Eggplant Lasagna:

The size of eggplants vary, and some may have more slices than others (especially if you slice them a bit thinner), so feel free to build another layer if two layers of eggplant don’t seem like they will be enough. You really can’t go wrong here.

Pro Tips:

  • If you want this to be spicy, add some red pepper flakes into the marinara/beef mixture.
  • Feel free to swap the ground beef with sausage meat or even ground turkey. If you want to make this vegetarian, just use marinara sauce as-is, or sauté some mushrooms and spinach and add it in instead of the meat.
  • You can definitely experiment a bit with the filling! For example, I kept it really simple, but you could sauté some onions and extra garlic with the meat if you wish.

  • Serves at least 6 or more depending on how much people eat.
  • Inactive time represents the time the eggplant is being "sweated" and the time the lasagna is resting after it's cooked.
  • The jar of marinara I used for this recipe was 22 ounces, but anything in that range is fine (a bit smaller is ok). 
  • If you have larger eggplants/more slices, feel free to build another layer vs. following exactly how I layered it.
