Homemade Jalapeño Jelly

Jalapeno jelly will become a tried and true recipe your family enjoys for years to come.  It takes less than 20 minutes to prepare and delivers the perfect sweet and spicy flavor that keeps you coming back for more.  This jelly is perfect to make in large batches and freeze to use later or share with friends and family.

Doubling this recipe or even tripling it is helpful because each jar you make will disappear fast!  It is a vibrant jelly that goes great with everything!  Spread it on buttered toast at breakfast, use it to spice up a Monte Cristo sandwich at lunch, or enjoy a perfect snack of crackers with cream cheese and pepper jelly.

Jalapeño Jelly Ingredients:

With just a handful of ingredients you can make the perfect homemade jelly.  It can be hard to find a jalapeno jelly in the store.  Especially one with the perfect amount of spice.  That’s why making it at home is so awesome.  It gives you complete control over the spice level and the quality of all the ingredients that go into the jelly.

  • Jalapeno Peppers: Seeded and cubed for a milder flavor. Leave the seeds in for more spice!
  • Red and Green bell peppers:Cubed and finely chopped in the food processor to add bits of sweet pepper flavor throughout the jelly.
  • Sugar: Sweetness you expect in a jelly.
  • Apple cider vinegar: Bring the vinegar to a boil then simmer for 10 minutes before adding in pectin to get a perfect jelly texture.
  • Liquid pectin: Used to thicken the jelly.

How to Make Jalapeño Jelly From Scratch:

Making jelly from scratch is a must try for any home chef.  It is much easier and quicker than you would expect and makes the perfect jelly every time!

  1. Chop peppers: In a food processor add the jalapeño, green bell pepper and red bell pepper. Pulse until finely chopped. Transfer to a large saucepan.
  2. Boil and simmer: Add the sugar and apple cider vinegar and bring to a boil.  Then, reduce heat and let simmer for 10 minutes.
  3. Add pectin: Mix in the liquid pectin and continue to simmer for 5 minutes. Next, remove from heat and let cool.
  4. Store: Lastly, transfer to jars and refrigerate.

How to make jalapeno jelly.

FAQ About Jalapeño Jelly:

  • How do you keep peppers from floating to the top?  Stir jelly a couple of times as it cools to evenly spread out the peppers.
  • How spicy is Jalapeno pepper jelly?  It can be as spicy or as mild as you like it.  Leave the seeds completely out or add some or all of them in for a spicier version.  Also, jalapenos that are starting to turn red or brown will be spicier than solid green peppers.  If you just aren’t getting as much spice as you would like you can add a pinch of red pepper flake in for even more spice.
  • Why isn’t my jelly setting up? Many times too much liquid in your peppers is the cause of a runny jelly.  Be sure to drain them and dry them completely before adding them in.

How Long Can I Store Homemade Jelly? 

Be sure to store in a sealed glass jar in a cool, dry place and it will be good for up to two years  Once opened, it needs to be stored in the refrigerator and it will last for up to 3 months.  It is important you properly sanitize before packing, so carefully follow these canning guidelines.

  • Wash your hands: Anytime you prepare food, be sure to wash your hands well to avoid contaminating the food.  This is especially important when canning food that will be stored for a such long period of time.
  • Cleaning: Wash the jar with hot water and soap.
  • Sanitize:  Place the glass jar in boiling water for 10 minutes.  Also put tips of tongs in the water.  Use the tongs to pull out the jar when it is finished.

This Dietitian's "Feel Good" Cards Will Help Heal Your Relationship With Food and Your Body

Toronto-based Brand Dr. Liza Has Expanded From Footwear to Bags

“I’ve always believed that fashion should be functional,” Dr. Liza Egbogah says. The Toronto-based osteopath who launched a line of shoes several years ago–an offering that’s grown from a comfortable classic pump to include booties, sandals and flats–has just released a collection of bags that also ties into this ethos.

“I often have patients come in with neck pain, shoulder pain, and back pain,” she says. “They didn’t know what the cause was. But when you looked at their posture, you’d see that they were tilted to the side, or one shoulder was significantly raised compared to the other side. When I’d ask what side of their body they’d carry a bag on, it always correlated with the side where the shoulder was raised. One of the reasons that happens is that over time, if you put a bag on your shoulder on one side, your body will naturally compensate and raise that shoulder to almost make a ‘hook’ for a purse with your muscles and your fascia, which is the tissue that connects everything in the body.”

After years of treating these physical complications caused by wearing the many different bags available on the market, early last year, Dr. Egbogah began drawing designs for her own brand. She was inspired by not only the pain her patients experience, but how they as professionals wanted to feel wearing her pieces. “A lot of the people I see are quite image conscious,” she says, adding that some would say, “I’d honestly rather live in pain” than carry some of the ergonomic backpacks and bags that were created in the past. “I wanted to make something that looks like a true fashion piece but with all the qualities that make it comfortable, and good for your posture,” Dr. Egbogah says. “You look good and you feel good.”

She points out, though, that “there’s no quick fix when it comes to posture”, and says that for those of us working from home–even if we’re set up in a “perfectly ergonomic work station”– that it’s essential to devote thirty minutes every day to physical activity. “And if you’re going barefoot at home but are used to having shoe support, that’s a disaster for your body. I usually recommend a supportive flat,” she says, laughing as she adds, “I have to make slippers next, apparently. That’s what people are telling me.”

And when you tell Dr. Egbogah something, she listens. The new Dr. Liza bag styles feature an ergonomic design, a flat base for balance and cushioned shoulder straps, and come in colours ranging from classic neutrals to pops of pink and red. Dr. Egbogah says that the final looks were crafted from a combination of “feedback from her social network, science, and fashion. As much as I want people to be comfortable, I want them to aesthetically love them,” she notes.

An attention to eye-catching appeal is nothing new to Dr. Egbogah, whose footwear not only includes solid-hued pieces but shoes that also boast prints inspired by her African background. “I was born in Calgary but both my parents are Nigerian,” she says when asked about the vibrant Ankara prints available in her line. Not only are they connected to African design, but they also have a significance tied to her childhood years spent in Malaysia, where she learned the Batik techniques found in Southeast Asia in school. “I used to make these wonderful fabrics,” she recalls, saying that incorporating these wax prints into her products “felt like I was bringing something global together in my shoes.”

Dr. Egbogah knew from an early age that her calling was in medicine. “At age six, I realized I wanted to be a doctor,” she says. “I loved helping people. Back then, they would call me ‘the golden child’, and I assumed it’s because I have blonde hair–in the village where my parents are from, you have maybe one percent of the population that has blonde hair. But then later on, I found out it’s because my great-grandfather was the medicine man in the village, and they felt like I had that healing ability.” While she made t-shirts and scrunchies in her youth and was always inspired by her “stylish family”, Dr. Egbogah says she was unaware that this passion could ever be tied to her practice. “To now be a designer and doctor is amazing,” she says. “I didn’t know you could do both!”

Today, Dr. Egbogah sees the two disciplines as inherently linked. “We wear fashion because we want to look good, and we want good posture because we want to look good,” she says. “And it ties in to how people see us. As a Black woman, my parents always taught me that one of the ways to open doors for yourself and get people to see you differently is to stand up straight, to be tall.”

This advice raises an important concept that has been given extra attention recently as the Black Lives Matter movement continues to highlight systemic racism in all corners of life, from academics to employment. “I’ve been educating people in my stories because I think people see me and think, oh you’re successful–clearly racism hasn’t affected you too much,” she says. “I’m letting them know that every step of the way since I was a kid that I’ve had to overcome so many hurdles to get where I am. And I think that’s been helpful for them.”

As Dr. Egbogah and other BIPOC voices continue to bring these essential points to light on social media and during interviews, she expresses concern that people are becoming fatigued by the continued conversations around systemic racism and social injustices. “I was optimistic for a period, but now I feel like people are kind of losing momentum and the focus isn’t there anymore,” she says. “It’s disheartening.”

She also addresses the notion that the BLM movement has become commodified–that the pain and trauma exposed over the past weeks amplifies an unhelpful narrative. “It’s so important for media to show the positive side” of being part of BIPOC communities, she says. “People have to recognize that Black lives, but also Black livelihood, matters.”

Banana Cookies Recipe

If you love banana bread, you will absolutely love these soft Banana Cookies. They are full of banana flavor and warm cinnamon, filled with chocolate chips and crunchy walnuts for an amazing textural contrast.

These cookies remind me of a muffin top, they are dense but super soft just like a banana muffin without the bottom half. These cookies can be made smaller but I prefer the oversized version because they are perfect for a small breakfast with my morning coffee.

How to make Banana Cookies:

For the banana cookie batter, I mixed all the ingredients by hand with a whisk and a spatula, no fancy mixer is needed. I also used the potato masher to mash the banana, but you can use a spoon, or a fork. The riper the banana, the easier it is to mash.

  1. First, you’ll need to brown the butter in a light color saucepan, so that you can easily tell when the butter is ready. Allow it to cool to room temperature.
  2. Mash the bananas in a mixing bowl and whisk in the egg, brown butter, sugar, and vanilla.
  3. Sift together flour, baking soda, baking powder, cinnamon, and stir in the salt. Mix the dry ingredients into the wet ingredients until the cookie dough comes together. Stir in the chocolate chips and chopped walnuts.
  4. Use a medium cookie scoop to divide the cookie dough, 2 scoops for each large cookie, top with additional chocolate chips and a whole walnut if desired. Bake for about 13 minutes at 350°F.

How many bananas do I need to use for this recipe?

The recipe calls for 1 cup of banana. This is equivalent to about 2 medium bananas. If your bananas are on the smaller side, it may take 2 ½ bananas. And if they are on the larger side, it may be less than 2 bananas.

To be exact, you can mash the banana in a separate bowl and measure exactly 1 cup of mashed banana for the recipe. Make sure to use ripe bananas for the best flavor. If you end up with leftover banana, toss it in a smoothie.

What other fillings can I use for banana cookies?

I used semisweet chocolate chips and walnuts in this recipe. You can use all chocolate chips or all walnuts. Just make sure to keep the total filling to 2 cups.

You can replace the walnuts with pecans, or replace the combinations with white chocolate chips and macadamia nuts for a banana version of these white chocolate macadamia nut cookies.

Storing leftover Banana Cookies:

These cookies can be stored at room temperature for up to 3 days or in the refrigerator for up to a week. These cookies are softer when you store them. It is best to wrap them individually and store in a container for softer cookies.

  • 4 oz unsalted butter brown
  • 1 cup brown sugar lightly packed
  • 1 large egg room temperature
  • 1 cup mashed bananas about 2 medium bananas
  • 1 ½ teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 ½ teaspoon ground cinnamon
  • ½ teaspoon kosher salt
  • 1 cup walnuts toasted, roughly chopped
  • 1 cup semisweet chocolate chips
  • Extra chocolate chips and/or whole walnuts for garnish

Instructions

  • To make brown butter, heat unsalted butter in a light color saucepan over medium heat. Once the butter melts, it will start getting foamy. Once the foam subsides, you’ll see clear bubbles. Continue cooking and stirring constantly to keep the butter from burning. Once the butter smells nutty and turns a caramel color, turn off the heat. This process will take about 7 - 9 minutes. Allow brown butter to cool to room temperature before using.
  • Preheat the oven to 350°F.
  • Add brown sugar, mashed bananas, egg, vanilla extract and brown butter to a large mixing bowl and beat with a whisk until thoroughly combined.
  • Sift the flour, baking soda, baking powder and cinnamon together in another bowl. Stir in the salt, mix with a whisk to evenly distribute. Add the dry ingredients mixture to the wet ingredients mixture, mix with a spatula until the cookie dough comes together. Stir in the chocolate chips and chopped walnuts.
  • Use a medium cookie scoop to portion the dough. For smaller cookies, use 1 scoop of dough, this will yield about 42 cookies. For larger cookies, add two scoops of dough on top of each other to form one large cookie, this will yield about 21 cookies. Garnish with extra chocolate chips and/or whole walnuts if desired.
  • Bake small cookies for 10 minutes and large cookies for 13 minutes.

Pearls Are One of the Hottest Men’s Jewellery Trends for 2020, According to Lyst

Online fashion aggregator Lyst has just unveiled its new jewellery-focused report and according to its data, pearls are one of the hottest men’s jewellery trends for the year.

Thanks to the likes of Harry Styles, Shawn Mendes, A$AP Rocky, Pharrell and Billy Porter rocking pearl pieces this year, Lyst reported that there has been 11,000 monthly searches for men’s pearl jewellery since January. Styles is a particular influencer in the space – after rocking a pearl necklace in December of last year during his Fine Line promotional tour, searches for similar jewellery pieces increased 31 per cent, according to Lyst, whilst searches for ‘men’s pearls’ are up 17 per cent year-on-year. Searches for freshwater pearl anklets are also up 67 per cent since January.

Men have also been influenced by Connell’s chain from Normal People, with searches for “silver” and “chain necklaces” up 47 per cent year on year. There’s also been an overall uptick in male shoppers this year – 150 per cent, to be exact.

For women, gold jewellery reigns supreme with 68 per cent of jewellery searches dedicated to the category. Chunky gold necklaces are the most wanted item (searches are up 113 per cent year-on-year), followed by gold hoop earrings (up 51 per cent).

As the pandemic changed the way we work from in offices to at home and on Zoom, searches for statement necklaces are up 70 per cent –Missoma and Alighieri lead the way in this category – and searches for statement earrings are up 35 per cent. Plus, with more time to consider their options and the processes by which their pieces are made, consumers are searching more and more for sustainable jewellery pieces.  According to the report, searches for ethical jewellery have increased 20 per cent since the beginning of the year, and the search term ‘recycled gold’ is up 29 per cent year-on-year.

As for the year’s other big jewellery influencers, Timothée Chalamet is responsible for more than 20,000 searches for jewelled pins similar to the one he wore to the 2020 Oscars, whilst the Queen caused an 86 per cent surge in searches for turquoise brooches following her speech in April. Meghan Markle also influenced shoppers this year – after wearing a gold evil eye necklace on a Zoom call, searches for similar pieces increased 36 per cent over the following week.

Three Ways To Use Essentials Oils For Reducing Stress

How can an Oil do all that?

An Essential Oil is the essence of the plant, distilled, to connect you back to the power of nature. Inside many plants, hidden in roots, seeds, flowers, bark, are concentrated, highly potent chemical compounds. Every essential oil has its own unique chemical profile, but most oils can be categorised as having either uplifting or calming properties.

When you open a bottle of pure, unadulterated Essential Oil your senses are awakened, responding to the naturally occurring aroma. These natural compounds travel to the limbic area of your brain, where moods and memories are stored and generated. The compounds naturally transform the way you think and feel. Regular use begins to create new pathways for thoughts, feelings and behaviour.

Here are three simple ways you can introduce Essential Oils into your Self-Care practice.

  1. Partnering Essential Oils with a Yoga or Meditation Practice can be very powerful. It can hold ground and centre us more deeply & quickly. Apply a drop to your palms and inhale deeply at the beginning of your practice to help settle you.
  2. Using Essential Oils for relaxation and sleep is very useful to help you unwind. Apply a drop of a calming Oil such as Lavender to your pillow at bedtime and the aroma can comfort and soothe you in the night should you wake.

    1 cup Epsom salt + 10 drops Lavender oil

Instructions
Add Lavender oil to Epsom salt and stir together.
Draw a warm bath and add ¼–½ cup of Epsom salt to the tub.

I have a long-standing practice of Yoga & Mediation. I have been practising Meditation for nearly 20 years and Yoga for 10 years. I take inspiration from many forms & traditions, including Buddhism, Ashtanga, Vinyassa Flow, Forest, Hatha, Yin, Restorative, & Meditation.

My Tibetan Buddhist teacher Geshe Tashi Tsering is one of the most most senior Tibetan Lamas in the UK. Geshe Tashi studied in the lineage of the Dalai Lama, and has been spiritual envoy and translator for His Holiness Dalai Lama in the UK and Europe on many occasions.

I teach my classes from the heart, weaving themes of philosophical guidance into the physical challenges. I take great inspiration from all of my wonderful teachers, & hopefully that knowledge & skill can be passed on during classes.

Some of my other current Mentors include Meriel Angharad (Breeze Yoga) & renowned International Yogi Elena Brower (YogaGlo), as well as Norman Blair.
